More quick easy dinners!

Remember how I had antipasto for dinner last week? Well, I had no problem utilizing the leftovers for another quick dinner. With the leftover artichokes, red peppers and provolone cheese, I made pita pizzas. It was another night of cabbing the kids around and when I came home, my eye caught the leftovers in the fridge and some pitas I had in the freezer. It was simple to throw together and great for kids. Of course, my kids won’t eat the artichokes and peppers but you can top the pizza with anything you like. Whole wheat pitas make the dinner extra healthy! These pizzas can also double as an appetizer.

All you have to do is spread your pitas with marinara sauce and top with your favorite things such as cheese, artichokes , pepperoni, tomatoes, mushrooms, chopped ham, etc. The list can go on and on! Bake for about 10 minutes in a 350 degrees oven or until cheese is melted and pizzas are hot.

On to my next dinner. Since it was Cinco de Mayo yesterday, we had to have something Mexican. I browned some ground turkey and added some taco seasoning. The kids had tacos for dinner but this is what I had.

Mexican taco salad is on of my favorites. There is no recipe here as I take some romaine lettuce, tomatoes, the taco meat, shredded cheese and top it off with mashed avocados mixed with sour cream, crushed chips and a little salsa. Simple but good! You can always add corn, black beans, onions or whatever other ingredients you like.

Pita pizzas are a big fav around here! My kids love it because they get "whatever they want" on their pizzas. And, yummy mexican salad!!

I'll take both of these. My son would love a pita pizza (although he's a pepperoni/cheese purist!). I love that avocado mash you put on there! YUM!

Wow, this mexican salad looks amazing!!! I always had it as a staple growing up, but I'm rediscovering it again as my flatmate had never had it before. I'm inspired to add a few touches here and there, just so she keeps the compliments coming!!

Great blog though, I just started mine yesterday, and it's SO inspiring seeing what everyone is doing!!

I love taco salads – and you know I'll eat anything pizza! 😀

Hope all is well with the end of the school year – I know how busy it can get.

My daughter graduates in two weeks from high school!! And then a week and a half after that goes to Germany for 3 weeks!

I love making pizzas also. It's also a hit with the kids. Not sure if it's eating the pizza, we'll use whole wheat dough, or making a mess;-)
