Crispy, golden, and bursting with bold flavor, Parmesan truffle fries are the ultimate crowd-pleaser. With a rich, earthy aroma from truffle oil and a generous sprinkle of Parmesan, these fries feel gourmet but couldn’t be easier to make. This simple side dish is effortlessly fancy, downright addictive and guaranteed to disappear fast!

French fries have always been one of my favorite side dishes. There’s just something about a pile of crispy, golden fries sprinkled with salt that never gets old. Whether paired with a perfectly cooked burger, grilled steak, or even just enjoyed on their own, they’re a comfort food classic. But sometimes, I like to take things up a notch and go beyond the usual salted-and-dipped-in-ketchup combo. That’s when I make what I like to call “fancy fries”—the kind that feel a little more special but are still easy to make at home.
When I want to elevate a meal without a lot of extra effort, parmesan truffle fries are my go-to. The combination of crispy fries, rich truffle oil, and savory Parmesan creates a side dish that feels indulgent and restaurant-worthy. Best of all, these fries can be oven baked or you can make air fryer truffle parmesan fries, so they’re just as convenient as they are delicious.

Ingredients
- Russet Potatoes – I prefer Russets because they get crispy on the outside and fluffy on the inside. You can substitute Yukon Golds for a slightly creamier texture.
- Olive Oil – Choose your favorite light, neutral-flavored cooking oil.
- Truffle Oil – White or black truffle oil adds rich, earthy flavor. White truffle oil is milder, while black truffle oil has a stronger, more intense taste. If you don’t have truffle oil, a drizzle of garlic-infused olive oil can add depth.
- Parmesan Cheese – Freshly grated Parmesan melts better and has more flavor than pre-shredded. Pecorino Romano can be used for a sharper, saltier taste.
- Salt – Use fine sea salt or kosher salt to season evenly. Truffle salt can enhance the truffle flavor even more.
- Fresh Parsley – Adds a fresh, herby touch. Chopped chives or a sprinkle of dried Italian seasoning can work as substitutes.

How to Make Air Fryer Truffle Fries
- Step 1: Wash and peel the potatoes. Cut them into ¼ inch thick sticks.
- Step 2: Soak the cut fries in an ice bath for 5 minutes to remove excess starch. Drain and pat them dry with paper towels.
- Step 3: Season the dried fries with olive oil, ensuring they're evenly coated. Place them in a single layer in the air fryer. Cook the seasoned fries in the air fryer at 375°F for about 20 -25 minutes, until they're crispy and golden brown. Flip once during cooking time. (Preheat air fryer if necessary.)
- Step 4: When the fries are done, place them in a bowl and toss them with the truffle oil. Season with salt to taste. Arrange the fries on a serving tray and sprinkle them with Parmesan cheese and chopped parsley. Serve while they are still hot.
Oven Baked Fries
If you don't have an air fryer or would like to make these fries in an oven, place the oiled fries on a large baking sheet. Bake in a 425 degrees preheated oven for about 25 minutes, flipping halfway through cooking time.
Variations/ Substitutions
- Garlic - Toss the fries with minced garlic or garlic powder before baking or air frying for an extra punch of flavor.
- Spicy - Add a sprinkle of cayenne pepper or red pepper flakes for a little heat.
- Sweet Potatoes - Use sweet potatoes instead of russets for a slightly sweeter, nutrient-packed version. Air fryer sweet potato fries are easy to make.
- Frozen French Fries - Use frozen French fries for an easy shortcut.

Equipment
A basket-style air fryer is great for making crispy fries with minimal oil, while an oven-style model offers more cooking capacity and versatility. Consider features like adjustable temperature control, easy-to-clean parts, and a large enough basket to cook fries in a single layer for the best crunch. If you plan to make air fryer truffle Parmesan fries often, a model with good airflow and even heating will give you the crispiest results.
Storage
Parmesan truffle fries are best enjoyed fresh when they’re hot and crispy, but if you have leftovers, they can be stored in an airtight container in the refrigerator for up to two days.
To reheat, spread them in a single layer in the air fryer at 375°F for about 3-5 minutes or bake in a 400°F oven for 5-7 minutes until they’re crispy again. Avoid microwaving, as it can make them soft and soggy. If they need a flavor boost, add a little extra truffle oil and Parmesan before serving.
Top Cooking Tips
- Soaking the cut fries in an ice bath for 5 minutes helps remove excess starch, resulting in crispier fries. Be sure to dry them thoroughly before seasoning.
- Whether using the air fryer or oven, avoid crowding the fries. This allows the heat to circulate around them, ensuring they cook evenly and get crispy.
- If using an air fryer, flip the fries halfway through cooking to ensure both sides crisp up nicely.
- Freshly grated Parmesan melts better and adds more flavor than pre-shredded cheese.
- If your fries are cut thinner or thicker than ¼ inch, adjust the cooking time. Thinner fries cook faster, while thicker ones may need a few extra minutes.
- Toss the fries with truffle oil and salt immediately after they’re done cooking so the flavors soak in while they’re still hot.
- For the crispiest fries, preheat your air fryer before adding the seasoned fries to it.
Serving Suggestions
Parmesan truffle fries are an excellent side dish that pairs well with a variety of meals, adding a gourmet touch to your dinner. They are the perfect complement to this Crispy Panko Fried Shrimp Recipe or my Crispy Parmesan Baked Cod. If you’re in the mood for something light, they go perfectly with Chicken Caesar Salad Wraps, or even with classic Oven Baked Hot Dogs for a fun twist on a casual meal. For burger night, try them alongside One-Pan Mushroom Swiss Burgers.
As for dipping sauces, Creamy Homemade Garlic Dipping Sauce, a tangy hot sauce, or a rich truffle mayo will perfectly enhance the flavors of the fries and complement your main dish. Of course, ketchup is served on the side as my husband cannot eat fries without it.
