Ingredients

  • 4 medium sized russet potatoes
  • 2 tablespoon olive oil
  • 1 tablespoon truffle oil
  • ½ cup shredded Parmesan cheese
  • ¼ teaspoon salt or to taste
  • Chopped fresh parsley for garnish

Instructions

  • Wash and peel the potatoes. Cut them into ¼ inch thick sticks.
  • Soak the cut fries in an ice bath for 5 minutes to remove excess starch. Drain and pat them dry with paper towels.
  • Season the dried fries with olive oil, ensuring they're evenly coated. Place them in a single layer in the air fryer. Cook the seasoned fries in the air fryer at 375°F for about 20 -25 minutes, until they're crispy and golden brown. Flip once during cooking time. (Preheat air fryer if necessary.)
  • When the fries are done, place them in a bowl and toss them with the truffle oil. Season with salt to taste. Arrange the fries on a serving tray and sprinkle them with Parmesan cheese and chopped parsley. Serve while they are still hot.

Notes

If you don't have an air fryer or would like to make these fries in an oven, place the oiled fries on a large baking sheet. Bake in a 425 degrees preheated oven for about 25 minutes, flipping halfway through cooking time.
