Do you have a “go to” meal? You know, the type of meal that you make over and over? Roast chicken is one of mine. And not only do I love cooking roasted chicken, the leftovers can be made into another spectacular meal.
The spring sports season is here. That means run, run, run. If I have the chance to cook dinner for two nights at once, I am all for it. The best part is that even my picky twelve year old son loves roasted chicken. He could eat it two, three, maybe even four times a week.
