    Strawberry Feta Skewers with Basil

    Strawberry Feta Skewers with Basil are a perfect light appetizer. They require only four ingredients and can put together in minutes. It doesn't get easier than this!

    Strawberry Feta Skewers with Basil are great for entertaining

    In the summer, I love hanging out with a drink and a few appetizers. Entertaining doesn't have to be fancy or complicated so I always keep some ingredients in my fridge to whip something up on short notice that goes well with a cocktail.

    As a matter of fact, these strawberry basil feta skewers are also perfect with sangria or a nice cold summer beer. They are lighter in calories compared to many appetizers and I would probably even describe them as healthy. What's not to like about them?

    These skewers contain only four ingredients.  I always keep a bottle of balsamic glaze in my fridge. The glaze dresses them up and gives them some extra savory flavor. It is also fairly simple to make your own balsamic glaze.

    Berries and basil spell summer!

    I love summer berries and will admit to eating more than my share of strawberries lately. So when I checked my refrigerator for fruit and saw the container of strawberries sitting next to a package of feta cheese, a little light bulb went off.  

    The basil in my garden has been taking over so I figured  it was time to pick some of the gigantic leaves and add them to this recipe. I also like to get basil from the local farms but right now there is no need to since my garden is pretty loaded with herbs. In the summer, I can never have enough basil and it especially goes well on a Caprese salad.  Even in the winter, I keep a basil plant right on my kitchen counter. It adds freshness to so many foods.

    While I used strawberries for these skewers, you could also use tomatoes and I think peaches would go well too. I like the strawberries because I have a love for anything sweet and salty. And the strawberries have been quite sweet this year.

    Strawberry Feta Skewers with Basil

    Ingredients

    • 12 large basil leaves
    • 12 medium strawberries cleaned cored and cut in half
    • 4 ounces feta cheese cut into 12-1 inch cubes
    • balsamic glaze for garnish

    Instructions

    • Lay down basil leaf and place a strawberry half, piece of feta and another strawberry half on top.
    • Wrap basil leaf around each end and stick a small skewer or toothpick through the middle. Repeat with all the strawberries.
    • Drizzle with balsamic glaze before serving.
