Roasted parmesan and panko crusted asparagus takes fresh roasted asparagus to a whole new level. Asparagus with panko (bread crumbs) is crispy, golden and healthy to boot! Parmesan crusted asparagus fries cook fast so they are perfect for a snack or easy side dish.
One of the things I love about early spring is asparagus. You know the weather is getting nicer when all the stores and markets are loaded up with this green vegetable. It is plentiful in the fall too but to me asparagus signals that winter is over.
I tend to either roast or grill asparagus. It is so easy to make and so delicious. A few times, I have been in a restaurant where they had fried asparagus on their appetizer menu. I think that was the key to getting my husband and daughter to try this vegetable. Since I rarely fry anything at home, I thought I'd try coating some asparagus with Panko bread crumbs and Parmesan cheese to give it that same restaurant effect. There was no splattering grease and plenty of calories were spared. In fact, I had a big plateful as my dinner one night. I also think it would be great for lunch topped with a poached or fried egg.
Or make this as an appetizer and serve some marinara sauce on the side. Any way it's served, I think it's really good!
Ingredients Needed
- Asparagus – Wash the asparagus and break off or trim the woody ends. Avoid any asparagus with mushy heads.
- Olive Oil – You can use any light, neutral oil.
- Panko Bread Crumbs – These Japanese-style bread crumbs are made from coarse bread and have a lot of crunch.
- Parmesan Cheese – This hard, dry cheese adds a salty, creamy flavor to the roasted asparagus.
- Garlic Salt – You can also use garlic powder and salt if you prefer to have more control over the amount of salt in the dish.
- Black Pepper – Black pepper adds depth and spice to the asparagus.
Steps To Making Parmesan Crusted Asparagus
- Preheat oven to 400 degrees.
- Coat the asparagus with the olive oil.
- In a small bowl, mix together the Panko, cheese, salt and pepper. Set aside.
- Place the asparagus in a single layer on a baking sheet. Sprinkle with the crumb mixture.
- Cook for 12 to 18 minutes depending how done you would like the asparagus and how thick the asparagus is.
Temperature/ Roasting Time
This asparagus is roasted at 400 degrees and can take anywhere from 12 to 18 minutes. Please don't judge me by how long I cook my asparagus. My family likes it well done but that is probably not the norm. If you like it more firm, just roast it for a few less minutes. I also like to turn the broiler on for the last minute or two of cooking so that the top is golden brown.
