This tomato chick pea salad recipe is my idea of a perfect lunch or side dish. The chick peas provide plenty of protein and fiber to keep you full. Both tomatoes and chick peas are very healthy.
What type of tomatoes are used in this chick pea salad ?
I love the pretty heirloom cherry tomatoes that I purchase every week at Trader Joe's. Right now you might have slim pickins on tomatoes so any type of cherry or grape tomatoes works in this recipe.
Jersey tomatoes are not available now. But these will keep me satisfied until summer when I can start picking my own home grown tomatoes or get them at a local market.
One of the things I look forward to when the weather warms up is visiting the Collingswood Farmers Market. It makes me sad to think that this might not happen in May this year but trying to think positive as I know I will be visiting markets soon enough.
Looking at these tomatoes makes me happy and reminds me that bright days are ahead.
I make a big batch of this salad and my lunch is set for a few days. I really like it stored in the fridge for a day or two. Since the tomatoes are the cherry or grape type, they do not get as soggy as big chopped tomatoes would.
This salad is a great side dish served next to or before an entree too.

I used fresh parsley but if you can't get it right now, go ahead and use some dried herbs. It still will give this Tomato Chick Pea Salad lots of flavor.
