Tomato and Chick Pea Salad

This easy vegan salad with heirloom tomatoes and chick peas is perfect as a side dish or lunch.

Ingredients

  • 15 ounces can chick peas, rinsed and drained
  • 16 ounces grape or cherry tomatoes
  • 2 Tablespoons chopped fresh parsley
  • 3 Tablespoons olive oil
  • the juice from one medium sized lemon
  • ½ teaspoon garlic powder
  • salt and pepper to taste

Instructions

  • In a medium size bowl, mix together chick peas, tomatoes and parsley.
  • Drizzle the oil and lemon juice over the salad. Sprinkle with garlic powder.
  • Mix well. Add salt and pepper to taste.
