Easter Rice Krispie Treats are the perfect no bake Easter desserts. These cute Easter nests are fun to make with the whole family and taste as great as they are adorable. Make a batch the night before Easter while you are coloring eggs.
I wish I were one of those creative, crafty moms, but I was not born with much artistic ability. Cooking savory dinners such as Stovetop Mac and Cheese, Mini Lasagna Bolognese, and Italian Stuffed Peppers are more my style.
Back in the day, when my kids were younger, my son informed me at 6 pm that he needed to bring in a treat to school the next day. My choices were to run to the local store and pick up some goodies or scramble to make something quick and easy.
I decided on taking the hard road. As my husband stated, I have a reputation to uphold. What would my son's class think if the mom who had a food blog sent in store bought treats? The horror!
After checking my pantry, I realized we had a few boxes of Rice Krispies Cereal, so I decided to make good use of them, and these Easter Rice Krispie Treats were born.
Thanks to a well stocked pantry and a mini muffin pan, we were just minutes away from a tasty no bake Easter dessert that my son could help me make.
Why I Love These No Bake Easter Treats
- They're cute. These little Rice Krispies and marshmallow Easter nests are topped with frosting and little jelly bean eggs. They are almost too cute to eat.
- They use pantry ingredients. We always have Rice Krispies, marshmallows and frosting in the pantry. All I needed to add was a bag of jelly beans.
- No special skills required. As I mentioned, I'm not terribly crafty but I was able to pull off these no bake easter desserts in just a few minutes and the whole family was able to help.
Ingredients Needed
- Crispy Rice Cereal – You can also use the chocolate coated crispy cereal.
- Butter – I like to use salted butter.
- Marshmallows – Did you know you can freeze marshmallows? I always keep a bag in the freezer!
- Frosting or Icing – If you can't find green icing, you can add a few drops of food coloring to a can of white icing.
- Jelly Beans – You could also substitute Robin's Egg candy or M&Ms.
How to Make Easter Nests
- Melt butter and stir in marshmallow until comletely melted.
- Stir in the crisped rice cereal.
- Using wet hands, scoop the marshmallow and cereal mixture into mini muffin cups and allow to cool.
- Remove the Easter nests from the muffin tin and top with frosting and jelly beans. Serve immediately.
Tips for Making Easter Rice Krispie Treats
- No marshmallows? You can use a 7 oz. jar of marshmallow creme but the final treats will be much stickier.
- Keep marshmallows in the freezer. They defrost in just minutes and won't go stale or sticky.
- Spray the muffin tins with cooking spray before pressing in the Rice Krispie mixtute and the Easter nests will be easier to remove.
- Press a little divot into the center of each nest with your thumb to make adding frosting and jelly beans even easier.
- Store these for up to 3 days in an airtight container. However, it's best to add the frosting just before serving.

Easter Rice Krispie Treats
Equipment
- muffin tin
Ingredients
- 2 tablespoons butter or margarine
- ½ package 10 oz marshmallows
- 3 cups crispy rice cereal
- 1 can Green frosting see note**
- 16 ounces Jelly beans
Instructions
- In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
- Add crispy rice cereal. Stir until well coated.
- Using wet hands (see note*), put balls of mixture into a (24 cup) mini muffin tin coated with cooking spray. Flatten mixture to fit muffin-pan cups. Cool.
- Carefully remove from pan.
- Spread or pipe green frosting on the tops of each cup. Top with two to three jelly beans.
- Best if served the same day.
- MICROWAVE DIRECTIONS:
- For step one, in microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Continue with next steps. Microwave cooking times may vary.
