Stove Top Mac and Cheese

mac n cheeseGone are the days where I make boxed mac and cheese. I have nothing against making food from a box but I am glad my son realized there is a world outside of “the box “.  My daughter has been a homemade mac and cheese lover for a long time. As a matter of fact, there was always the mac and cheese dilemma in my house. One child wants homemade while the other wants it out of the box. Luckily they both came together and decided that homemade is best.

While we all love baked mac and cheese, it can take more time than I have most week nights. So I solved my problem and created this stove top mac and cheese. It is creamy enough where it doesn’t have to be baked. Dinner is on the table in less than 30 minutes.

This recipe is one that I use over and over again. It reheats well in the microwave and can be eaten after a baseball or soccer game even though I made it  several hours before.

Kerrygold

Last month was National Grilled Cheese Month and Kerrygold sent me some of their yummy cheeses and butter to try. I did make grilled cheese but forgot to photograph it. When you see a buttery grilled cheese sandwich with Kerrygold oozing out, no one wants to wait for mom to take a photograph. So I used some to make this creamy macaroni and cheese.

I guarantee if you make this, you will love the ease and it will go into your dinner rotation! It’s one of my kids favorites.

Stove Top Mac and Cheese

This easy to make mac and cheese will please the whole family.
Ingredients
  • 16 ounces elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3 cups low fat milk, 2%
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • 12 ounces sharp cheddar cheese, shredded
Instructions
  1. Bring a large pot of water to a boil over high heat and cook macaroni according to instructions on the box for al a dente. Drain well.
  2. In the same pot, melt the butter on medium heat and stir in the flour. Mix with a wire whisk and slowly add milk, salt and paprika. Cook on low heat for a few minutes until thickened.
  3. Add shredded cheese and mix well until the sauce is smooth.
  4. Add macaroni and mix well until pasta and sauce is well combined. Serve warm.
