Tortilla Land Shrimp Fajitas

Last week I received a package from Tortilla Land. It came at 9am in the morning. By 9:15, my kids were eating the best cheese quesadillas they ever had! I was sent a box of three large packages of tortillas along with some recipes that can also be found on their website by clicking HERE.

I was sent enough to have some extra to share. But did I? No. This time I was a very bad neighbor. My family would not let me part with a single tortilla. Tortilla Land’s motto is “So fresh, they haven’t been made yet”. This is the truth. These are uncooked tortillas that only take a minute to cook up. I did mine in a cast iron skillet and watched the flaky tortillas puff up perfectly. We kept making more and more until there were none left. These are perfect for a holiday barbecue as you can also cook them right on your grill. They need to be cooked 30 seconds on each side and this is what they look like.

Since seafood and tortillas are a favorite of mine, I made some shrimp fajitas for dinner the other night. The kids have been eating cheese quesadillas for lunch every day and we needed a change.
I marinated up some shrimp, popped them on the grill for a few minutes and served them with fresh Tortilla Land tortillas, guacamole, salsa, tomatoes, sour cream and cheddar cheese. What could be easier and fresher than that? I’m telling you, BUY some of these tortillas and you won’t be disappointed! ****

Smoky Fajita Shrimp

1 lb large shrimp, peeled and deveined
the juice and zest from one lime
1 TBS olive oil
1 tsp chipotle powder
1 tsp garlic powder
1 tsp paprika
1/4 cup chopped fresh cilantro

Mix all ingredients in a bowl and refrigerate for one hour. Put shrimp on a grill pan in a single layer on a hot grill. Cook for 3 to 5 minutes or until shrimp turn pink while turning constantly.

What a great idea! I bet they taste amazingly fresh. And Mexican food with shrimp is seriously awesome. We actually just got back from dinner at a Mexican restaurant and I had a shrimp dish ๐Ÿ™‚ I've missed too many of your posts!

I love shrimp tacos and/or fajitas! Fresh is always best when it comes to tortilla's too….really a smart idea for the manufacturer to come out with these!

These tortillas are SO GOOD! I had them over my sister-in-law, Aggie's house. She received a sample too and they were delicious. We made chicken quesadillas with them. Your shrimp fajitas look delicious too. I wish my area sold these tortillas.
