Lazy dinners, a little too much ice cream, college campus tours with my teenage son and farmers markets have all been on my agenda. We can't forget the summer cocktails with chips and salsa. Because the weekend just wouldn't be right without that!
Make Your Own Salsa
I love making my own salsa. In college I was a waitress at a Mexican restaurant so I hung around the kitchen often. They used canned tomatoes in their salsa and I have been using them ever since. I prefer the fire roasted tomatoes for more flavor and like to load the salsa up with cilantro. The herbs really make it fresh tasting.
I put together a video for this blender salsa (below) so you could see just how easy it is to make. The cookbook has 120 recipes that are perfect for the beginner but also great for the busy cook. Good food should be made without a lot of fuss. These recipes are packed with flavor just like the salsa recipe is. All the recipes contain five ingredients or less. The book also has tips and tricks to make your time in the kitchen and grocery store a breeze.
It takes only three minutes to make a great salsa! How easy is that? You can roughly chop the ingredients. There is no need to finely chop anything as everything is eventually going into the blender.
Clean-up Tip!
The worst part of cooking for me is cleaning up so try this helpful tip. Once the salsa is removed, fill the blender three quarters of the way with water and a drop of soap. Put on the lid and turn the blender on until all the salsa has been removed from the sides. Rinse the blender clean and wipe if necessary. Now it's time to enjoy the salsa with a cocktail.

RECIPE
Three-Minute Blender Salsa
Ingredients
- 2 (14 ounce) cans fire roasted tomatoes
- 1 poblano pepper, seeded and chopped 2 jalapeno pepeprs can be swapped for the polano pepper
- ⅓ cup chopped onion
- ⅓ cup packed fresh cilantro
- the juice from one lime
- salt and pepper, to taste
Instructions
- Put the tomatoes, pepper, onion, cilantro and lime juice into a blender. Blend for 1 to 2 minutes or until smooth.
- Season with salt and pepper to taste.
- If you do not have a regular blender, all the ingredients can be put into a bowl and an immersion blender can be used to blend the salsa together.
