Homemade Fish Sticks

Both the kids and my husband can be picky about the fish they eat. Most frozen fish sticks are on their good list while I prefer anything fresh out of the ocean. Today I was at the grocery store and saw that cod filets were on sale. Cod is a white mild fish. I thought if I put some Panko bread crumbs on it, I could disguise it as a frozen fish stick out of a box. Pretty sad, right? The family devoured it and I was happy. This is a nice meal for a week night because it cooks quickly.

Homemade Fish Sticks

cooking spray
1 lb thick cut cod filets
1 cup Panko bread crumbs
1/4 cup flour
1/4 cup Parmesan cheese
1 TBS paprika
1 tsp Italian seasoning
1 tsp kosher or sea salt
1 tsp garlic powder
1/2 cup buttermilk
lemon or tartar sauce for serving, if desired

Preheat over to 425 degrees. Place a baking rack on top of a cookie sheet and coat with cooking spray. Cut the cod filets into 3 to 4 inch sticks. In a small bowl, mix togther Panko crumbs, flour, cheese, paprika, Italian seasoning, salt and garlic powder. Put the crumb mixture in a gallon size ziploc bag. Dip the fish in the buttermilk then let any extra drip off. Add about 4 pieces of fish at a time to the bag and shake until well coated. Place the fish on the baking rack. Continue until all the fish is coated and on the rack. Bake for about 10 to 12 minutes or until fish is flaky and golden brown. If you would like it extra crispy, the fish can be turned once during cooking with a spatula. Serve with lemon or tartar sauce if desired.

You've got a hit here. They're not panko, but just tonight I made homemade bread crumbs from stale bread. I think I'll follow your lead and make these fish sticks.

My husband is the ultimate ticky fish eater. I think he would only eat it fried. But, since the Dr. has jumped my case this would be a good alternative for me.

I was never into frozen fish sticks, but I'm sure yours were far superior to the boxed version.

Truth be told, the fish sticks out of the box are the only fish I'd eat – until recently, when I did something similar to you. I fooled myself! Now THAT'S sad. LOL! Loving your version. 🙂

I will definitely give this recipe a try! We are trying to eat fish more often, and these look much more substantial & appealing then store bought. They would probably taste extra good dipped in some malt vinegar….
