Pantry Salad

There are always those times where I crave a big colorful salad but when I look in my fridge, all I have is some romaine lettuce. You’re probably thinking, why even bother? And one thing, I don’t like is a salad filled with just lettuce and bottled dressing.
There is a remedy for this lonely lettuce syndrome. If you keep your pantry stocked with the right ingredients, you can have a salad anytime, even in the dead of winter when the produce at the grocery store doesn’t look good.
Here are some ingredients I always keep in my pantry:
  • bottled roasted peppers
  • jars of olives
  • marinated artichokes
  • cans of mandarin oranges
  • all kinds of nuts…. walnuts, almonds, pecans, etc
  • dried cranberries
  • sun dried tomatoes
  • canned beans…chick peas, cannellini, black beans, etc
  • water chestnuts
  • anchovies
  • olive oil
  • vinegar, balsamic, red wine, cider, etc
  • seasonings, garlic powder, onion powder, etc

I usually have some type of cheese in the fridge. This time I went with a Greek salad since I had some Greek seasoning and feta. This really beat the salad blues! Did you realize you had a salad in your pantry? What do you like in your salad?

Greek Pantry Salad

romaine lettuce

marinated artichoke hearts drained

bottled roasted peppers, drained

canned cannellini beans, rinsed and drained

jarred kalamata olives

feta cheese

Greek seasoning

olive oil

balsamic vinegar

Mix your personal preference of amounts of lettuce, artichokes, peppers, beans and feta together. Sprinkle with Greek seasoning and drizzle with oil and vinegar. Toss well.

What a creative post! I really never thought about a Pantry Salad yet I do almost always throw pantry items into salad. My favorite adds are cheese and beans.
