Cinco de Mayo Fish Tacos

Happy Cinco de Mayo! You have to have tacos tonight, right? Although I wanted some Mexican, the husband and I wanted to eat light and healthy. These fish tacos fit the bill. Don’t be fooled by the picture which you might think is a tostada. I took the picture before I folded the taco in half. I love to fill my tacos with healthy ingredients. So first I made some cole slaw. I took a bag of slaw mix and added some red wine vinegar and a spoon of sugar.

Then I made my blackened fish. I sprinkled some steak seasoning and chili powder on some nice filets of tilapia. Or you could use your favorite cajun fish seasoning.

Drizzle some olive oil in a large frying pan and sear the fish for a few minutes on each side. Doesn’t the fish look great?

Now gather up your favorite toppings. I like mashed avocado, sour cream, salsa and cheddar cheese. Heat some corn tortillas, pile on the slaw, fish and toppings. Fold your taco and try to eat it without it dribbling down your face. Enjoy and don’t forget to wash it down with a margarita!

Lisa. These sound like the ultimate cinco de mayo dinner. Yes, Margaritas would be a necessity.

We both were thinking fish for Cinco de Mayo. Matt loves fish tacos but I wonder if I could get him away from the fried fish, this is so much healthier

We had all these brilliant plans for Cinco de Mayo, but then when push came to shove surfing took precedence and we ended up having soup and doing nothing to celebrate.

Last year I was in San Diego for a couple weeks and I lived on fish tacos. Such a beautiful thing and I always forget they can be made at home even in a boring land locked state.
