    Ingredients

    Ingredients needed to make a Hummus Veggie Sandwich.
    • Whole-Grain Bread – Use slices of your favorite whole grains bread. A hearty bread provides a nutritious base for the sandwich.
    • Red Pepper Hummus – Hummus adds a great flavor and creamy base to the sandwich. You can use store-bought hummus or homemade hummus. Feel free to use your favorite flavor of hummus like a garlic or spicy hummus to change up the flavors.
    • Mayonnaise – Just a touch of may adds creaminess and a hint of tanginess. Vegan mayo can be used to make the sandwich vegan-friendly.
    • Sprouts or Microgreens – Sprouts are packed with nutrition and add a fresh, crunchy texture and a burst of flavor.
    • Pickled Jalapenos and Onions –Although optional, the tangy and spicy kick of jalapenos and quick pickled red onions can take this sandwich to the next level. They can be omitted if desired.

    Instructions

    Hummus and mayonnaise are spread onto slices of whole grain bread.
    1. Spread a generous amount of hummus onto 4 slices of bread and an even layer of mayo on each of the other 4 slices.
    Sprouts, red onions and jalapenos are added to a veggie sandwich.

    2. Add sprouts on top of the mayo and pickled red onions & jalapenos on top of the hummus.

    Tomato slices, cucumner and lettuce are piled onto a sandwich.

    3. Place lettuce, cucumber and tomato slices on the slice of bread. Sprinkle the top of the tomato with everything bagel seasoning or salt and pepper.

    4. Close the sandwich and slice in half before serving.

    Hint: Serve immediately or wrap in brown paper or plastic wrap and place in the fridge (or lunch box with ice pack) if storing for later in the day.

    Variations/ Substitutions

    • Vegan – For a vegan hummus sandwich, omit the mayonnaise or use a vegan mayo.

    Hummus Veggie Sandwich

    Ingredients

    • 8 Slices whole grain bread
    • 8 tablespoons Red pepper hummus homemade or store bought
    • 4 tablespoons mayonnaise vegan mayo can be used to make the sandwich vegan
    • 1 cup Sprouts or microgreens
    • Pickled jalapenos and onions can be left out if desired
    • 4 large slices Red leaf or green lettuce Washed and patted dry
    • 1 medium cucmber, sliced
    • 1 large tomato, sliced
    • 1 Tablespoon everything bagel seasoning or 1 teaspoon of each salt and pepper substitute 1 teaspoon of salt and ½ teaspooon pepper if desired

    Instructions

    • Place 8 pieces of bread on a clean cutting board, add spread 2 tablespoons of hummus on 4 slices of bread and one tablespoon of mayo on each of the other 4 slices.
    • Add sprouts on top of the mayo and add pickled red onions & jalapenos on top of the hummus.
    • Place lettuce, cucumber and tomato slices on bread. Sprinkle the top of the tomato with everything bagel seasoning or salt and pepper. Close sandwich and slice.
    • Serve or wrap in brown paper or plastic wrap if storing for later in the day. Leep any leftovers tightly wrapped in the refrigerator.
