    Smoky Sausage Vegetable Soup

    Smoky Sausage Vegetable Soup is both a healthy recipe and comfort food. A bowl of this soup is a meal that you'll want to make all the time!

    Sausage Vegetable Soup

    Happy new year! 

    Are you trying to eat healthy in the new year? Yes,  I am on the bandwagon with everyone else.

    After a good two week holiday binge of having too many cookies, chocolates and cocktails, it is that dreadful diet time. Today, I haul my bigger- than- two- weeks- ago- butt to the gym and start making some healthy recipes. I've stocked my fridge with plenty of veggies, fruit and plain Greek yogurt.  I'm not sure if this will get me into my size six jeans that have been sitting in my closet for a long time. But it will help me feel healthier. 

    I've made some Skinny Mini Mexican Frittatas to heat up for breakfast every morning and I will also be making my Strawberry Yogurt Breakfast Parfaits quite a bit. Some easy salads should work well for lunch and now I am planning out some healthy dinners. Broth based soups with plenty of vegetables are always a good choice.

    Why do I love this Smoky Sausage Vegetable Soup ?

    I love this soup because it is hearty and satisfying. It includes low fat smoked turkey sausage and plenty of vegetables that are good for you. Nutritionists always say to fill your plate with veggies so instead I filled this soup with them. Frozen vegetables are so easy to cook with so that is what I used in this soup. 

    There are so many types of frozen veggies that the option is yours. You could also use fresh veggies if you have some chopping time. I like the mixed soup veggies because they contain several different types for a great variety. 

    I also love this soup because it is ready in 30 minutes. Woohoo!!

    What ingredients are used in this soup?

    Low sodium chicken broth, turkey kielbasi (or smoked sausage), chopped kale and frozen vegetables are the main ingredients in this soup. It also has seasonings and tomato paste to give it great flavor.

    This sausage vegetable soup is very versatile and you could really use any type of smoked sausage that you like. Heck, you could even use sausage that isn't smoked if that is what you like. I chose turkey kielbasi because I love the mild, smoky flavor and turkey sausage is a bit lighter in calories. Chicken sausage is a great choice too and I buy the spicy kind often.

    Smoky Sausage and Vegetable Soup

    Ingredients

    • 1 TBS olive oil
    • 8 ounces smoked turkey or chicken sausage sliced (I used turkey kielbasi)
    • 8 cups low sodium chicken broth
    • 1 cup chopped kale
    • 16 ounces frozen mixed soup vegetables such as carrots, peas, okra, green beans, potatoes, etc
    • 2 TBS tomato paste
    • 1 TBS Italian seasoning
    • salt and pepper to taste

    Instructions

    • Heat oil on medium in a large stockpot. Brown sausage for a few minutes.
    • Add chicken broth to pot and bring to a simmer.
    • Add kale, veggies, tomato paste and Italian seasoning. Stir well and cover with lid.
    • Cook on low for about 20 minutes. Add a bit of extra water if soup is too thick.
    • Season with salt and pepper to taste.

      This looks so good. And so do the others in your list. I know what you mean about the lonely jeans. Well, sort of. Don't tell anyone but I'm still wearing the smallest of my maternity jeans, and Em turned 1 two months ago. O.K., so healthy soup for me as well then!

      I do believe in the power of broth. I've been eating a lot of soup similar to your recipe and I've noticed it helps me maintain my weight. It's a great way to sneak in a lot of veggies.
