- Pie Crust – A pre-made, ready-to-use pie crust available in the refrigerated section of the grocery store is convenient and flavorful. If desired, you can substitute it with a homemade crust or a store-bought alternative like a frozen pie crust.
- Shredded Cheese – Sharp cheddar cheese is a popular and flavorful cheese that adds richness and a savory taste to the quiche. If you prefer a different type of cheese, you can substitute it with shredded mozzarella, Swiss, or even a dairy-free cheese.
- Olive Oil – If preferred, you can substitute with other cooking oils like vegetable oil, canola oil, or melted butter.
- Broccoli – Broccoli adds a vibrant green color and a slightly crisp texture to the quiche. If broccoli is not your preference, you can substitute it with other vegetables such as spinach, mushrooms, or bell peppers. I also like to use broccolini which looks like baby broccoli.
- Roasted Red Peppers – These sweet and smoky peppers provide a delightful tanginess and a pop of vibrant color. You can make homemade roasted red peppers or you can use jarred roasted red peppers or substitute them with sun-dried tomatoes for a different flavor profile.
- Eggs – Beaten eggs serve as the binding agent and add richness to the quiche.
- Seasoning – Salt, pepper, garlic powder and onion powder enhance the flavor of the quiche and add a savory taste. Feel free to adjust the quantities to suit your personal preference or add other herbs and spices such as dried basil, thyme, or paprika to customize the seasoning.
- Milk – Fat-free evaporated milk keeps the quiche lowfat yet creamy. If desired, you can substitute it with regular whole milk, reduced-fat milk, or a non-dairy milk alternative like almond milk or soy milk.
How To Make a Vegetarian Quiche
- Preheat oven to 350°. Line a 9 inch deep-dish pie plate with the pie crust. Trim and crimp edges. Spread cheese on the bottom of the crust.
2. Heat a large skillet heat oil on medium heat and saute broccoli until wilted. Add red peppers to pan and mix well. Remove from heat.
3. In a medium size bowl, whisk together eggs, salt, pepper, garlic powder, onion powder and milk.
Spread the veggie mixture over the cheese then pour the egg mixture over the veggies.
4. Bake for 45 to 50 minutes or until crust is golden and toothpick inserted in center comes out clean.
Cool for at least 15 minutes before cutting into 8 slices. Quiche can also be served at room temperature.

- Thaw frozen pie crust before using.
- If using jarred roasted red peppers, drain them well to remove any excess liquid. Excess moisture can make the quiche watery, so pat them dry with a paper towel before adding them to the filling.
