    Vegan Mango Banana Smoothie

    A mango banana smoothie is the perfect way to start your day! This vegan tropical smoothie with coconut milk contains only 3 ingredients and is a good option for breakfast but also a sweet and healthy snack.

    Vegan Tropical Smoothie

    Smoothies are great for breakfast any time of year and great for an afternoon snack on a hot day.  The other day was a bit on the chilly side, but we had plenty of warm sunshine, so I thought making a mango banana smoothie was appropriate.

    I took my drink out on the patio and closed my eyes. I took a sip of the sweet tropical flavors and envisioned a turquoise water, pink sand between my toes and a cool breeze blowing through some palm trees.  A shot of rum in this drink might have helped further, but it was too early in the day for that.  This dairy free smoothie reminded me of a tropical island and that summer is not too far away.

    Are Vegan Smoothies Healthy?

    This mango banana smoothie recipe is vegan, dairy free and naturally gluten free, but is it healthy?

    Making a delicious smoothie healthy comes down to what you add to it, and how much you add to it. There are plenty of ways to make smoothies healthy but they also must be consumed in moderation.

    To make this smoothie vegan we've opted to make it plant-based by using coconut milk. Coconut milk is flavorful and helps to keep you satisfied longer. I have noticed some discrepancies between brands of coconut milk when it comes to calories. Read labels carefully and look for a low fat, unsweetened coconut milk so you aren't inadvertently adding loads of extra calories to your drink. You can also use other plant-based milks like soy or almond milk.

    Fresh fruit does have natural sugar but since it is natural the body tends to process it better than white sugar or other sweeteners. The fruit will be sweet enough that no added sugar will be needed.

    So, to keep your vegan smoothie healthy pay attention to what you add to it and don't go overboard and limit yourself on portion sizes.

    Ingredients

    • Frozen bananas - I like to freeze ripe bananas so they are ready for this smoothie. A great way to do this is to slice fresh bananas and place each one in an individual freezer bag.  
    • Light coconut milk - This has less fat and calories than regular coconut milk but if you want a richer texture with extra creaminess then use regular coconut milk.
    • Frozen mango -  I buy large bags of frozen mango chunks but you can also peel and seed fresh mango then chop them and freeze.

    How to Make a Mango Banana Smoothie

    You can make this smoothie whether it's summer or not. It takes just three simple ingredients and a blender or food processor. 

    1. Add frozen banana slices and frozen mango pieces to a high-speed blender.
    2.  Pour in the coconut milk.
    3. Blend together until smooth.

    Hint: This coconut milk smoothie takes less than five minutes to make.  I always keep cut up frozen fruit in my freezer to make the process even easier.

    Variations / Substitutions

    • Add protein - For more protein in this banana mango smoothie, add 1 cup of  Greek yogurt, a cup of skim milk or a scoop of protein powder.  Of course this mango smoothie recipe will no longer be vegan if you add milk or yogurt.  
    • Switch out the coconut milk - Instead of coconut milk you can use oat milk, soy milk, unsweetened almond milk, orange juice or your favorite fruit juices. It will give the fruit smoothie a whole new flavor profile. Or for an extra light smoothie, use coconut water. This has even less calories and provides extra hydration.
    • Make it sweeter - Add a touch of honey or some maple syrup for a sweeter smoothie. 
    • Use fresh fruit- If using fresh fruit instead of frozen, just add some ice cubes to give it a more frozen texture.

    Mango Banana Smoothie

    This vegan tropical smoothie is easy to make with only three ingredients.

    • 2 frozen bananas sliced
    • 1 can 14 ounces light coconut milk
    • 1 cup mango chunks

    Instructions

    • Put all ingredients in a blender. Blend until smooth. Add a few ice cubes if you would like it more frozen. Makes 2 to 3 servings.

      this is one of the weirdest winter I can remember. it's so hard to believe we're almost mid January I haven't taken my boots out of the closet and most of the days I go out in a t-shirt.
