Hummus Veggie Wrap

Spring is in the air and it has been in the 60’s for the past few days. I have been eating a lot of soup for lunch this winter and it was time to make a change. Who wants to eat soup when the sun is shining and I can leave the house without a jacket? I decided to make a quick wrap that was light and healthy. Remember the roasted peppers I made not too long ago? This was the perfect time to use them. There always seems to be hummus and whole wheat tortillas in our fridge. I added some veggies, a little feta cheese and it was a wrap that included the four food groups. I used roasted red peppers and arugula but cucumbers, tomatoes, roasted eggplant or mushrooms are also great choices. The nice thing is you can add any veggies you like and it becomes the perfect lunch.

Hummus Veggie Wrap

2 TBS hummus
1 whole wheat or flour tortilla (6 to 8 inches)
1/2 cup of your favorite veggies (I used roasted red peppers and arugula)
2 TBS crumbled feta cheese

Spread the hummus on the tortilla. Add the veggies and sprinkle with cheese. Roll up, making sure to tuck the sides in and cut in half.

My daughter called last night and was going on about this hummus wrap she had bought for her lunch. She said it was amazing and she was going to the store to get stuff to make her own. She is coming home tomorrow I will have to show her this one. Take Care 🙂

Love hummus. I eat it all year. Of course, I live in Florida too. 🙂
