Frozen Pineapple Raspberry Margaritas

It has been REALLY HOT in NJ. I am not talking about your typical warm April day. I mean sweaty, fry an egg on the sidewalk, 90 degrees hot. We have our air conditioning blasting and there is no baking in this house. We did start up the grill and I made these cool drinks the other night. They were perfect for the heat!

I was in the mood for margaritas and was happy to find a bottle of Cuervo in my liquor cabinet. I did not have any margarita mix but that was all for the better as these margaritas are made with real juice and fruit. I happened to have a bag of frozen raspberries and thought I’d try a pineapple raspberry combination. It was delicious! I could have drank the whole pitcher myself but decided to share with the husband. He needs some antioxidants too, you know.

Don’t be confused by the picture as I poured the drinks into wine glasses. I really need to buy margarita glasses but these didn’t make the drinks taste any differently. Next time, I will also garnish the drink with some fresh pineapple. As I was pouring, I realized we were out of straws. I cannot drink a frozen drink without one, so my kids cute snowmen straws came in handy. Cheers!

Frozen Pineapple Raspberry Margaritas

1/2 cup water
1/4 cup sugar
12 oz bag frozen raspberries
3 ounces tequila
3 ounces triple sec
1 cup pineapple juice
a handful of ice cubes
Mix the water and sugar together in a small cup so that the sugar is dissolved. Add the sugar water, raspberries, tequila, triple sec, and pineapple juice to a blender. Blend until smooth. Add ice cubes and continue to blend until ice cubes are crushed and blended well. Pour into glasses. Makes 4 drinks.

It has been in the 90’s here lately as well. I definitely could have used this over the weekend! It wold be perfect for a ladies night as well. Great recipe, Lisa.

ut oh that hot huh? we have 78 degrees here, but thank goodness very low humidity. I hate humidity.
I don’t cook when it’s hot out, but I do drink! LOL Love these.

It’s been in the 90’s here in Virginia too….but that’s ok. Better than snow. The drinks look very refreshing!

That drink looks great right about now. It was 90 degrees in RI today too! I haven’t put the air on yet, I just feel like it’s wrong in April.
But a nice frozen drink, just seems oh so right! 🙂

Haha… love the snowman straw. I can’t drink frozen margarita’s or I get brain freeze, so mine are always on the rocks. Beatufiul color in this and it sounds yummy!
