I really felt like having quiche for breakfast BUT I had cereal instead. The Dunkin Donuts caramel latte with extra whipped cream looked good BUT I settled for a latte with Splenda and skim milk. I really felt like sitting around and reading the paper this morning BUT I ended up running a few miles. Pizza sounded great for lunch BUT I made myself a nice healthy tuna wrap. Boy, my BUT has really been getting in the way! I think we need to do something about this BUTT!
Yes, our swim club opens this weekend and it is officially bathing suit season. YIKES! I know I will be gobbling down all kinds of goodies at our pool barbecue. So the least I can do is balance out those evil burgers with some lighter, healthier food. These tuna wraps are filled with crunchy vegetables and you can make them two ways. BUTT over the weekend, I will be making some desserts for the parties we are going to. Stay tuned for more sugary days ahead!
Confetti Tuna Salad Wraps
1 (6 oz) can solid white tuna, drained
1/4 cup diced cucumbers
1/4 cup diced carrots
1/4 cup chopped tomatoes
1 tsp fresh horseradish
1 TBS seasoned rice vinegar
1 TBS light mayonnaise
4 lettuce leaves
2 (8 inch) whole wheat tortillas
In a medium size bowl, mix all ingredients except lettuce and tortillas. Place 2 lettuce leaves on each tortilla and spread half the tuna mixture on each. Roll up and secure with toothpicks if necessary. These can also be made without the tortillas. Just fill each lettuce leaf with tuna mixture and roll up taco or burrito style. Makes 2 servings.
