Easy Buttermilk Pie Recipe

- 1 ¼ cups granulated sugar
- ¼ cup all-purpose flour
- ¼ teaspoon salt
- 3 large eggs
- 1 large egg yolk
- 6 tablespoons unsalted butter melted
- 2 teaspoons lemon juice
- 1 teaspoon vanilla extract
- 1 cup buttermilk warmed
- 9-10 inch pie crust already prepared
- fruit, whipped cream or sweet sauce for garnish
Preheat oven to 350 degrees F. In a large bowl, whisk sugar, flour, and salt. Whisk the eggs and egg yolk in a small bowl for about a minute then add to the large bowl and whisk all together. Slowly mix in the melted butter, lemon juice and vanilla.
Place buttermilk in the microwave on HIGH for 25 seconds, then add it to the filling and mix together until incorporated. Pour the filling into the pie pan (there may be a little left over, don't overfill)
PLace pie on a baking sheet. Bake for 30 mins then turn pie around in the oven for an additional 10-15 mins OR until the top of the pie is lightly browned.
Cool the pie completely (about 60 mins), then chill it for 2 hours before serving. Garnish with fruit or whipped cream.
Do not over whisk the mixture to where it becomes foamy which can cause the pie to brown unevenly.
Use a prepared frozen pie crust already in a tin or roll out a refrigerated crust into a pie dish according to package instructions.
This pie is ideal to make the night before as it can be cooled then chilled overnight in the refrigerator.
Great topped with berries, or slice fruit. It is also good whipped cream, chocolate or caramel sauce.
