Are you ready for a quickie? Now get your mind out of the gutter. I am talking about dinner. Tonight I had a PTA meeting so sandwiches were on the menu. I wanted to dress BLT's up a little so I made some balsamic avocado mayo. If you buy bacon that is already cooked, dinner can be on the table in 10 minutes. I broiled mine and it only took me 20 minutes to make these sandwiches. Feel free to substitute turkey bacon. I have to run so I'll leave you with this sandwich recipe. I need to be up bright and early tomorrow. I am going on a school trip with my daughter to the Pennsylvania Renaissance Faire. I am hoping they will have food I can blog about. Good night!
Turkey BLT with Balsamic Avocado Mayo
½ ripe avocado, mashed
2 TBS mayonnaise
1 teaspoon balsamic vinegar
4 slices toasted wheat or white bread
1 small tomato, sliced thin
4 slices cooked bacon
sliced turkey (enough for 2 sandwiches)
2 large lettuce leaves
In a small bowl, mix avocado, mayonnaise and vinegar. Spread the mixture on the 4 slices of bread. On 2 slices of bread layer tomatoes, bacon, turkey and lettuce. Top with two remaining bread slices. Cut sandwiches in half. Makes 2 sandwiches.

Avocado mayonnaise sounds great. I love BLT's - they are my favorite sandwich. I always add avocado slices but never thought of mixing them with mayo. YUM!!!
