    Everyone loves Rice Krispie treats, and these Halloween Rice Krispie treats are such a fun twist on the classic. Each bar is dipped in green candy melts, topped with sprinkles for hair, and finished off with candy eyes and a stitched mouth for a playful Frankenstein look. They have just the right balance of cute and spooky, making them a hit with both kids and adults.

    This recipe is perfect for getting little helpers involved in the kitchen. Kids will have just as much fun decorating as they do eating them, and the finished treats look great on a party platter. You can also wrap them individually in cellophane bags for a festive way to share with trick-or-treaters or as a school party treat.     Ingredients

    • Rice Krispie Cereal – Any brand of puffed rice cereal will work.
    • Mini Marshmallows – These melt more quickly and evenly than large marshmallows. If using large ones, just cut them into pieces first.
    • Butter – Unsalted butter works best so you can control the flavor.
    • Green Candy Melts – These give the signature Frankenstein look. If you can’t find green candy melts, use white candy melts and add green food coloring.
    • Edible Googly Eyes – Available in the baking aisle or craft stores. If you don’t have them, small chocolate chips or candy dots work as substitutes.
    • Black Icing – Use decorating icing in a piping tube for easy control. You can also use melted chocolate or black candy melts piped from a small plastic bag.
    • Black Sprinkles – These create Frankenstein’s “hair.” Chocolate sprinkles or crushed chocolate cookies can be used if you don’t have black sprinkles.

    Instructions

    Rice krispie mixture is stirred in a pot.

    Step 1: Grease or spray a 9x13 glass baking dish. (If using a metal baking sheet, I like to line it with parchment paper.) Over medium heat, melt the butter in a large pot. Add the marshmallows to the pot and stir until melted. Add in the rice krispie cereal and stir until the cereal is fully mixed with the marshmallows.

      Rice krispies are pressed into a tray to cool and set.

      Step 2: Transfer the rice krispie mixture into the 9x13 dish and press down until the top is flat. Allow the rice krispie treats to set for 30 minutes.

        Cooled rice krispie treats are cut into individual servings.

        Step 3: Remove the rice krispie treats from the baking dish and cut into 12 even sized rectangles.

          Rice krispie treats are dipped into green candy melts.

          Step 4: Melt the green and black candy melts according to the package. It can be done in a double boiler or microwave. Dip the top of each rice krispie treat into the melted green candy.

            Step 5: Next dip the top of the green part of the treat into the sprinkles to make it look like hair.

              Step 6: Add two candy eyeballs for the eyes then use the black icing to draw a crooked mouth that looks like stitches. Allow to set fully before serving or transferring to an airtight container. To store arrange in a single layer then use wax paper or parchment paper before topping with another layer of treats.

                Hint: Be sure to use fresh Rice Krispies so the treat doesn't have a stale taste and texture.

                Variations

                • Swap the Candy Color – Use purple or orange candy melts instead of green to create other Halloween characters like monsters or pumpkins.
                • Change the Hair – Try crushed chocolate cookies, chocolate sprinkles, or even shredded coconut tinted black instead of black sprinkles.
                • Different Faces – Use red icing for a scar, white icing for teeth, or add candy corn noses for a silly twist.
                • Cereal Swap – Use Cocoa Krispies or Fruity Pebbles for a different look and taste while still decorating them like Frankenstein.

                Equipment

                You don’t need much equipment to make these Frankenstein Rice Krispie Treats. A large pot is essential for melting the butter and marshmallows, and a 9x13 pan works perfectly for pressing the mixture into shape.

                Wax or parchment paper helps prevent sticking, especially when layering for storage.
