Mmmmnn, goulash. I remember being a child and my mom making this because my dad loved it. This goulash has a red wine gravy and I especially like egg noodles served with it. This is definitely a comfort food fall dinner.

This is one of my classic fall dinners that I make when company comes over. It's easy to prep in advance so you can enjoy time with friends or family. Another winter squash can be substituted also.
