    Smoked Salmon Tea Sandwiches

    Smoked salmon tea sandwiches are an easy-to-make addition to any afternoon tea party, shower or served as a light lunch offering. Basic white bread is fancied up with salmon, cream cheese and thin slices of cucumber for a scrumptious yet simple afternoon tea sandwich.

    I have to say that I am not a dainty tea kind of girl. But once I went to The Four Seasons for high tea around the holidays, I was hooked on the concept.  While the tea, sandwiches and mini pastries were delicious and the atmosphere was divine, afternoon tea can be very pricey. The afternoon tea at a fancy hotel might be saved for a special occasion, but why not have your own afternoon tea at home?

    Whenever I have a craving for some tea sandwiches, I make these smoked salmon sandwiches with cream cheese and cucumbers. They are easy and delicious while bringing about just the right air of fanciness. The little salmon sandwiches would also be a great addition to a brunch or you could even serve them as an appetizer before dinner.

    Ingredients Needed for Smoked Salmon Tea Sandwiches

    I don't give exact measurements in the recipe because everyone likes the filling a little different. I prefer my sandwiches light on the cream cheese but spread on as much or as little as you want.

    • Sandwich Bread – They make fancy breads for tea sandwhiches but plain white bread will work just fine.
    • Cream Cheese – Let the cream cheese come to room temperature for easy spreading.
    • Sliced Cucumber – Use a mandoline for paper-thin slices.
    • Smoked Salmon – Look for thin slices but layer on as much as you like.

    How to Make Afternoon Tea Sandwiches

    1. Spread a thin layer of cream cheese on slices of bread. (I remove the crusts first.)
    2. Top with slices of cucumbers and salmon.
    3. Top with another slice of bread.
    4. Cut into desired shapes. (Cut into 4 triangles or use a cookie cutter for something a little more fancy.)

    Tips for Making the Best Tea Sandwiches

    • Bring the cream cheese to room temperature otherwise the bread will tear when you try to spread it.
    • While you can refridgerate these for a few hours it is best to prepare them just before serving.
    • Pile the sandwiches on a pretty platter, cake stand or tiered tray for a beautiful presentation.
    • Remove the crusts before making the sandwiches and spread all of the ingreients to the edge of the bread.
    • Freeze the bread for an hour or two before making the sandwiches and it will be easier to spread the cream cheese and the bread will slice much easier.
    • Dry wet ingredients (like cucumbers) with a paper towel before adding to the sandwiches.
    • Teas sandwiches should be eaten in 2-3 bites. Don't make them too big.

      There's something about cream cheese and lox that screams for cucumber. I've eaten it like that all my life (on a bagel, of course :-).

      I also like adding thinly sliced sweet onion.

      Have you ever tried it with pressed cottage cheese? It may not work as well in a tea sandwich since it's more difficult to spread, but it tastes great.
