    Easy Dinners to make this week!

    Check out these five easy dinners! Family meal time will be stress free!

    easy dinnersLast week I took a little vacation to Florida. It was nice, relaxing and I barely lifted a finger. I didn't even (GASP) cook.

    My daughter was on a Habitat for Humanities spring break trip and my husband had to work. So it was just my son and I. We visited some family in Cape Coral and then hung out with friends in Fort Lauderdale. As much as I love to eat out, it was a little tough to count calories since I am trying to get in better shape. But I made sure I walked a lot and just cut down on my portion sizes. My son is not very adventurous and his favorite meals consist of burgers and pizza. Guess what we ate?

    This week I am back to cooking and the spring craziness has begun. My daughter is getting ready to go to college and runs from her school activities to her part time jobs. My son goes from his school activities to baseball then soccer practices. Throw in a few other school events and our whole family is running in a bunch of different directions. There is not much time to put dinner on the table but I still do. These easy dinners are a life saver!

    I think its important that we try and sit down to dinner together even if its a few nights a week. Dinner could consist of a quick bowl of macaroni and cheese or turkey wrap but we are still eating together. 

    These easy dinners I have created for Food Fanatic are great to have a meal on the table without any stress. The dinners are easy to make and not very time consuming. Many can be made in advance and heated in the microwave.

    While dinnertime is not perfect in our house, there is always something ready for whoever is home. Of course, we love to eat out and get take out but I try to get dinner on the table whenever possible.
