Green colada smoothieI am going to let you in on a little secret today. I started running again but I am not telling my thirteen year- old son. As soon as I am in very good shape, I will challenge him to a one mile run and hopefully will beat him. You might think that’s mean but this middle age woman just needs to get back in shape and that will be the way to do it.

Don’t feel sorry for him because at thirteen he beats his mom at almost any athletic activity except for  bowling. I did get him in the last game we bowled by three pins. Don’t think he will find out about our secret either.  Thirteen year- old boys do not read their mothers food blogs so I have no worries. And if you know him, don’t tell him about our secret either.

This might not really happen but it will be a great way for me to get in shape, right? Now I need some nutrition on the mornings that I will run so this green smoothie is what will be made several times a week. I am not a big breakfast person but I don’t mind drinking a smoothie especially in the summer.

Come Monday, after your big holiday weekend, you might want to try this smoothie too. It will get your energy back. We all know that you will have gorged yourself with hamburgers, potato salad, cocktails and red, white and blue desserts. So keep this recipe handy and have a happy Fourth of July weekend!

Serves: 2 servings
This green smoothie is healthy and perfect for breakfast or a snack.
  • 1 banana
  • 1 cup baby spinach or baby kale
  • 1 cup fresh pineapple chunks (canned can also be used)
  • ½ cup light coconut milk
  • 1 cup crushed ice
  1. Add all ingredients to blender. Blend until smooth. Pour into a glass and serve.

I love some green smoothie in the morning, it just makes my day so much better and healthy, great ingredients to mask the spinach flavor and good luck on beating your thirteen year old at running, you must train hard lol
