A Quick Shrimp Dinner and Some Blog Awards

With all the kids summer activities, we are usually pressed for time. Having a nice dinner at least a few nights a week is important to me. So the other night, I quickly defrosted some shrimp and made this dinner. My garden is blooming and I now have fresh tomatoes, jalapenos and plenty of herbs. I used some of my purple and Italian basil to enhance this dish. In under 30 minutes, this shrimp and angel hair pasta was served!


Tomato Herbed Shrimp with Angel Hair Pasta

16 oz dried angel hair pasta
2 TBS olive oil
1 large tomato, chopped
3 cloves crushed garlic
2 TBS fresh chopped parsley
3 TBS fresh chopped basil
1 cup white wine
1 lb large shrimp, peeled and deveined
a squeeze of lemon
1/2 cup half and half
salt to taste
grated Parmesan cheese
crushed red pepper

Cook pasta according to package directions. In a large frying pan, heat olive oil on medium and saute tomatoes and garlic for a few minutes. Add parsley, basil and wine. Cook on low until simmering. Add shrimp and cook until no longer pink. Add lemon and stir in half and half. Cook for another minute or two then add pasta to pan. Add salt to taste. Toss gently and serve with Parmesan cheese and crushed red pepper.

Wow, you’ve been quite the award collector! Congrats. Even though I’m new to your blog, I think it’s very cool, and your recipes are always delicious. I won’t lie, I’m jealous of your garden… your basil looks great. Can’t wait til I have a garden next year down south 🙂

Looks yummy. I know what you mean about being hard pressed for time. Im due to go back to work full time in September (until we have another baby!- thinking about maternity pay hence going back full time!) and I think Im really going to struggle with cooking meals in the week.

My basil died this year – too much rain I think. Yours looks fab and v healthy

Congrats on the awards :). Ya know, I’ve actually been craving shrimp for a very long time, particularly with pasta (because that’s the best way to serve it)…I think your recipe is bringing me one step closer to finally making it :P!
