After months of winter’s chill, seeing those bright red berries piled high is like the first little whisper of spring. It's a small but welcome reminder that warmer days aren’t too far off. And while they’re delicious on their own, February is the perfect time to dress them up for something special.

    Valentine’s Day is the ideal excuse to start bringing those juicy berries back into the kitchen, and what better way to enjoy them than dipped in chocolate? White chocolate-covered strawberries are one of those desserts that feel elegant but couldn’t be easier to make—especially when you use long-stem strawberries for that extra touch of sophistication. They’re sweet, creamy, and just the right amount of indulgent, making them the perfect treat to share with someone you love.

    Ingredients

    • Strawberries – Choose ripe, bright red strawberries with green tops and perky leaves. Long-stem strawberries look extra elegant and are easier to dip. Wash and dry completely before dipping—any moisture can make the chocolate seize.
    • White Chocolate – Use good quality white chocolate bars, melts, or white chocolate chips. Chop bars into small pieces for easier melting.

    1. Step 1: Place the white chocolate in a microwave-safe bowl. Melt chocolate in the microwave in 15-second intervals, stirring after each, until fully melted.

    1. Step 2: Stir the warm melted chocolate until smooth and let it cool slightly to a comfortable temperature.

    1. Step 3: Line a baking sheet with foil or wax paper. Holding each strawberry by the stem, dip it into the melted white chocolate, coating it almost completely but letting any excess chocolate drip off. Place the strawberries on the prepared sheet.
    White chocolate is drizzled over chocolate covered strawberries to add a decorative touch.
    1. Step 4: Once the chocolate sets slightly, drizzle the remaining chocolate over the strawberries using a piping bag with a small opening. Allow the strawberries to set completely for another 20 minutes. Refrigerate if not eating right away.

    Hint: If you want to drizzle additional chocolate on top, a piping bag or a small zip-top bag with the corner snipped works perfectly.

    Variations/ Substitutions

    • Chocolate – Swap white chocolate for dark or milk chocolate for a richer, more classic flavor. You can also alternate white and dark chocolate for dipping and drizzling.
    • Toppings – Add festive sprinkles, crushed nuts, shredded coconut, or mini chocolate chips before the chocolate sets.
    • Flavored Coating – Use flavored melting wafers like strawberry, mint, or caramel for a unique twist.
    • Fruit – Not a fan of strawberries or just looking for something different? Try dipping banana slices, apple wedges, or dried apricots in white chocolate for variety.

    I like to use a glass bowl to melt the chocolate pieces in. Also it is important to line your baking sheet with wax paper, parchment paper or foil prevents sticking and makes cleanup effortless. If you want to add an elegant drizzle on top, a piping bag works best, but a small zip-top bag with the corner snipped is a simple and effective alternative.

    Storage

    Store white chocolate covered strawberries in a single layer on a plate or in an airtight container, lined with wax paper to prevent sticking. Keep them in the refrigerator for up to 24 hours for the best freshness.

    If making them ahead, avoid storing them too long, as strawberries release moisture over time, which can affect the texture. Let them sit at room temperature for a few minutes before serving to soften the chocolate slightly.

    Top Tips

    • Excess moisture on the berries can make the chocolate seize or slide off. Pat them completely with dry paper towels before dipping.

    • White chocolate can set fast, so dip and drizzle without long pauses.
    • For best results, let the strawberries chill for at least 20 minutes to firm up before serving.
    • These are best enjoyed the same day or within 24 hours.

    You can make these in advance, but this sweet treat is best enjoyed within 24 hours. Store them in the refrigerator and let them sit at room temperature for a few minutes before serving.

    Can I make these with frozen strawberries?

    Frozen strawberries will become mushy as they thaw, so they are not recommended for this recipe.

    Why is the white chocolate clumpy?

    Clumpy chocolate can result from overheating or water getting into it. Follow this method to melt white chocolate in the microwave.

    What should I do if the chocolate on my strawberries does not look even?

    The strawberries do not have to be perfect as drizzling more white chocolate on them will cover any imperfections. You can also give them a dusting of sprinkles, crushed nuts or mini chocolate chips to amke them look even prettier.
