Roasted delicata squash delivers rich fall flavor with almost no effort. The edges turn golden, the centers tender, and that hint of natural sweetness makes it hard to resist. It’s an easy side dish recipe that feels cozy and seasonal, and pairs well with almost any meal.

Slices of golden roasted delicata squash on a platter.

Butternut and acorn squash tend to get all the attention, but delicata squash is the quiet standout of the fall table. If you love squash like I do and haven’t tried roasted delicata squash yet, it’s time to fix that. The skin is completely edible, so there’s no peeling or wrestling with a tough rind. The texture turns creamy in the oven, the flavor is lightly nutty, and it delivers everything you enjoy about other squash varieties with far less effort.

I also love how beautiful it looks on the plate. Those scalloped half-moons feel a little fancy without any extra work, and they can instantly elevate even the simplest weeknight meal. Whether you pair it with roasted chicken, a cozy soup, or a hearty grain bowl, delicata adds warmth, color, and just enough sweetness to make the whole meal feel special.

    What is Delicata Squash?

Delicata squash is a small, oblong winter squash with pale yellow skin and green or orange stripes. Unlike many other varieties, its thin skin is completely edible, which means no peeling and faster prep. Inside, the flesh is creamy, mild, and slightly sweet, with a natural nuttiness that deepens as it roasts. It’s a versatile squash that works well in both savory and sweet dishes, making it a favorite for easy fall cooking.

    Three fresh delicata squashes.

    Ingredients

    • Delicata Squash – Look for squash that feel firm and heavy for their size with smooth skin and defined stripes. No need to peel; just wash well and scoop out the seeds.
    • Olive Oil – Use a good-quality extra virgin oil for the best flavor. Avocado oil works as a substitute.
    • Sea Salt – Enhances the natural sweetness of the squash. Regular table salt works fine if that’s what you have.
    • Paprika – Adds mild warmth and color. Smoked paprika is a nice alternative if you want a deeper flavor.
    • Black Pepper – Freshly ground pepper adds a bit more bite, but pre-ground works as well.
    • Maple Syrup – Gives a touch of sweetness and caramelization. Honey is an easy swap if you prefer.

See recipe card below for exact quantities and instructions.

    How to Cut Delicata Squash

Cutting delicata squash is quick because the skin is tender and edible. Start by slicing the squash in half lengthwise, then use a spoon to scoop out the seeds.

Lay each half flat on the cutting board and cut into ½-inch crescent-shaped pieces. Since the skin softens as it roasts, there’s no need to peel it, which makes prep fast and easy.

    How to Roast Delicata Squash

A knife is used to slice delicata squash into half moons.
    1. Step 1: Wash squash and cut in half lengthwise. Scoop out the seeds then cut in ½ inch crescent slices.
Squash slices are seasoned in a bowl.
    1. Step 2: Put slices in a large bowl and drizzle with olive oil then mix well so all the squash is coated.
Squash slices are laid on baking sheet.
    1. Step 3: Place the squash slices in a single layer on a baking sheet. Sprinkle with salt, paprika and pepper. Roast for 30 minutes, or until squash is to desired tenderness, turning once in the middle.

    1. Step 4: Remove squash pan from the oven and drizzle with maple syrup before serving.

Hint: Be sure to spread the slices in a single layer on the baking sheet for even browning.

Seasoning and Sauces for Delicata Squash

Delicata squash works well with both sweet and savory flavors, so you can season it in a variety of ways. Cinnamon and brown sugar can be sprinkled on the squash instead of maple syrup for a warm, dessert-like twist.

Sage is another classic pairing, bringing an earthy, fall flavor that works beautifully whether you use dried or fresh. A mix of chili powder and cumin adds a smoky Southwestern vibe, while rosemary or thyme gives it a more herb-forward finish.

For something brighter, try lemon zest or a drizzle of balsamic glaze, and if you like heat, a pinch of red pepper flakes or a little hot honey adds a spicy contrast to the natural sweetness.

    Serving Suggestions

Roasted delicata squash is a side that works with almost any main dish, and its mild, nutty flavor makes it especially good with chicken, beef, and pork. Try serving it alongside Crispy Baked Bone-In Chicken Thighs or these easy Air Fryer Chicken Legs for a simple weeknight dinner. It also pairs well with heartier options like Slow Cooker Pork Chops with Garlic and Brown Sugar, where the sweetness of the squash complements the savory sauce.

You can also use roasted delicata squash in place of fries and serve it with a Chicken Teriyaki Burger for a fun twist. Or add slices to a fresh, colorful salad such as this Cranberry Pecan Blue Cheese Salad to give it extra texture and warmth. If you prefer a sweeter touch, sprinkle the squash with cinnamon and brown sugar and serve it as a cozy side for brunch or dinner.

    Storage and Leftovers

Store leftover delicata squash in an airtight container in the refrigerator for up to three days. To reheat, place the slices on a baking sheet and warm them in a 375 degree oven until heated through, which helps them stay caramelized instead of getting soggy. For a quick option, you can reheat them in the microwave, though the texture will be softer.

    Cooking Tips

    • Choose squash that feel firm and heavy for their size for the best texture.
    • Wash the squash well since the skin stays on.
    • Cut the slices evenly so everything roasts at the same pace.
    • Toss thoroughly with oil to help with browning and prevent drying out.
    • Spread the pieces in a single layer to avoid steaming.
    • Flip the squash halfway through roasting for even color.
    • Add maple syrup after roasting so it doesn’t burn.

    FAQ

Can I prep the squash in advance?

You can slice it up to a day in advance. Store the cut pieces in an airtight container in the refrigerator until ready to roast.

    Can I use frozen squash?

Frozen squash will work in a pinch, but it will not crisp or caramelize the same way fresh delicata squash does.
