Roasted Delicata Squash

Easy roasted delicata squash turns tender, caramelized, and naturally sweet, making it a simple fall or winter side dish.

Ingredients

  • 3 small to medium sized delicata squash washed
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • 2 tablespoons maple syrup

Instructions

  • Preheat oven to 425 degrees F. Wash squash and cut in half lengthwise. Scoop out the seeds then cut in ½ inch crescent slices.
  • Put slices in a large bowl and drizzle with olive oil then mix well so all the squash is coated.
  • Place the squash slices in a single layer on a baking sheet. Sprinkle with salt, paprika and pepper. Roast for 30 minutes, or until squash is to desired tenderness, turning once in the middle.
  • Remove squash pan from the oven and drizzle with maple syrup before serving.

Notes

Cinnamon and brown sugar can be sprinkled on the squash instead of maple syrup.
