balsamic watermelon feta

I am so sad that we are at the last weekend of summer. I know there is great things to look forward to in the fall but I just don’t want summer to end. My kids are with me on this. Who really wants to start school?

So I am making this appetizer because watermelon just reminds me of warm days.  It is easy to put together but perfect to serve to company. It also goes well with cocktails.  And I can’t get enough of this balsamic glaze.

I put together the recipe using fresh chopped mint but basil can be substituted or you can leave the fresh herbs out. My husband preferred it without them.

I hop everyone has a great holiday weekend. Enjoy the last days of summer!

I can just imagine how lovely this appetizer must be, with the contrast of sweet, salty, and tart. Yum! And I just so happen to have all of these ingredients on hand. I think I foresee a watermelon feta appetizer in my future : )
