I am so sad that we are at the last weekend of summer. I know there is great things to look forward to in the fall but I just don’t want summer to end. My kids are with me on this. Who really wants to start school?
So I am making this appetizer because watermelon just reminds me of warm days. It is easy to put together but perfect to serve to company. It also goes well with cocktails. And I can’t get enough of this balsamic glaze.
I put together the recipe using fresh chopped mint but basil can be substituted or you can leave the fresh herbs out. My husband preferred it without them.

- 2 cups cubed watermelon
- 4 ounces crumbled feta cheese
- 2 TBS fresh chopped mint
- 2 to 3 TBS balsamic glaze
- Arrange the cubed watermelon on a plate. Sprinkle it with feta and chopped mint.
- Drizzle some balsamic glaze over the watermelon.
- Serve chilled,
