I am so sad that we are at the last weekend of summer. I know there is great things to look forward to in the fall but I just don’t want summer to end. My kids are with me on this. Who really wants to start school?

So I am making this appetizer because watermelon just reminds me of warm days.  It is easy to put together but perfect to serve to company. It also goes well with cocktails.  And I can’t get enough of this balsamic glaze.

I put together the recipe using fresh chopped mint but basil can be substituted or you can leave the fresh herbs out. My husband preferred it without them.

Watermelon and Feta Appetizer

A great appetizer to celebrate summer.
Ingredients
  • 2 cups cubed watermelon
  • 4 ounces crumbled feta cheese
  • 2 TBS fresh chopped mint
  • 2 to 3 TBS balsamic glaze
Instructions
  1. Arrange the cubed watermelon on a plate. Sprinkle it with feta and chopped mint.
  2. Drizzle some balsamic glaze over the watermelon.
  3. Serve chilled,
