10 Recipes For Rotisserie Chicken

When you don’t have a kitchen, dinner time can be a little bit of a challenge.  We have several grills but with the torrential downpours between five and seven every night  I needed some other options. So I ran to the grocery store and bought  a rotisserie chicken along with a few side dishes.

If you need a semi take out meal, this is a great option for $10!  I picked up the chicken along with a can of baked beans and a light bagged Caesar salad.  Dinner is ready in five minutes and it is much better for you than fast food.

After eating this several times, it can be a bit boring.  But I will still be buying the roasted chicken from the grocery store. To vary things up, here are 10 recipes I can make with it:

Chicken Mango and Avocado Salad

Roasted Chicken Salad with Panzanella via Stacey Snacks

Roasted Chicken Wraps with Black Bean Salsa and Guacamole via Annie Eat’s

Buffalo Chicken Pasta Salad via Snappy Gourmet

Chicken Tortilla Soup

Buffalo Chicken Dip via Closet Kitchen

BBQ Chicken Pizza via My Baking Addiction

Crispy Chicken Wraps via Mel’s Kitchen Cafe

Creamy Chicken and Green Chili Enchiladas via Dinners For a year and Beyond

Thai Chicken Pizza via Joyful Healthy Eats

I might need my kitchen for a few of these but most I can make using my temporary makeshift kitchen. Happy chicken eating!

Rotisserie Chicken is always a great option! When I’m feeling lazy I will stop by the store and grab one. .. then usually have some easy mashed potatoes on the side!

I know, it is such a pain to not have a working kitchen…hopefully they are making good progress and you will be able to get back in there soon. In the meantime, those are great recipes you can use! I am going to tuck them away as well because they will be great for some of the very busy evenings we have! Have a great 4th of July!
