Apple Buttermilk Cake

The weather finally cooled down a little and I am ready for some baking. I am much more of a cook than a baker but in the fall and winter I like to make simple cakes and muffins. There is nothing like picking fresh apples and then taking them home to bake with . The smell in the house can linger on for days. For my first cake of the season, I went with a simple apple cake that I saw on Stacey Snacks and Two Peas and a Pod. I love those ladies blogs! I could just browse them for hours dreaming about what to cook the next time I have company. If you need a classic simple cake, this is it! I am sure you could substitute another fruit for the apples.


Apple Buttermilk Cake ( from Two Peas in a Pod and Stacey Snacks)

1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 stick unsalted butter, softened
2/3 cup plus 1 1/2 tablespoons sugar, divided
1/2 teaspoon pure vanilla extract
1 large egg
1/2 cup shaken buttermilk
1 large apple, peeled, and sliced
2 Tablespoons brown sugar
A little bit of extra cinnamon

Preheat oven to 400°F with rack in middle. Grease a 9-inch round springform cake pan. Whisk together flour, baking powder, baking soda, salt, and cinnamon. Beat butter and 2/3 cup sugar with an electric mixer at medium-high speed until pale and fluffy. Beat in vanilla. Add egg and beat until combined. At low speed, mix in flour mixture in 3 batches, alternating with buttermilk, beginning and ending with flour, and mixing until just combined. In a small bowl combine the apple slices with the brown sugar and extra cinnamon. Stir until apples are coated. Spoon batter into cake pan, smoothing top. Place sliced apples evenly over top and sprinkle with extra 1 1/2 TBS sugar. Bake until cake is golden and a wooden pick inserted into center comes out clean, about 25 minutes. Cool in pan 10 minutes, then turn out onto a rack and cool to warm, 10 to 15 minutes more.
