Much to the chagrin of apples, fall seems to be all about pumpkins lately. I've seen many pumpkin recipes around the internet recently that look amazing, but I am going to be a rebel. Today it's all about apples. And apple butter with ricotta and almonds. Can you think of a more delicious combination? This apple galette recipe the ultimate fall dessert.
Autumn is a great time of year to get delicious, crisp apples. I was at the Collingswood Farmers Market and bought some beautiful Empire apples to use in this recipe for this unique apple galette. They are perfect for baking but also a great eating apple. These apples are a good combination of sweet and tart but also the perfect lunch box fruit because they don't bruise very easily. I purchased my apples at the Wm Schober Sons booth. They are always at the Collingswood market but also a wonderful orchard that grows a variety of apples and other seasonal fruit.
Apple Buying Tips
- Feel the apple and ensure that it's firm. A good apple won't have soft or bruised spots.
- Most apples will have some natural scuffs or markings, but any obvious rotting or bruising is a bad sign.
- Ensure that the apple has a filled-in color, which indicates maturity and great exposure to sunlight.
- Give your apple a sniff; good apples will have a pleasant aroma, some stronger than others.
What is a galette?
A galette is a rustic French dessert that's similar to a pie or tart. A pastry or bread crust is filled with fruit and cooked on a baking sheet, rather than in a pie pan. There are also savory galettes made with fillings like vegetables or cheese.
I used premade frozen puff pastry as the dough in this galette recipe. But shhhh....don't tell anyone as this easy puff pastry dessert looks like it came from a bakery!
Steps to Making an Apple Galette?
With just a few simple ingredients, your Apple Galette with Ricotta and Almonds can be baked in no time.
- First, defost the frozen puff pastry. If you are a baker, feel free to make your own.
- Sauté the apples in a pan with apple butter, then roll out the puff pastry and top it with a sweet ricotta mixture.
- Top with apples and bake until golden brown.
- I finish off the pastry with some powdered sugar. It's a beautiful looking fall dessert!
Galette Baking Tips
- Bring puff pastry to room temperature before using.
- Don't roll the dough too thin (or too thick).
- Don't pile the filling too high. This is one of those instances where less is more. Avoid piling the filling on or you may end up with a mushy crust.
- Allow the apples to cool before piling onto the crust. This will help with even cooking.
- Brush the crust with egg for a golden color.
- Dot everything with a bit of butter just before baking for a gorgeous shine.
- This apple galette is probably best enjoyed the day it's made, but if you want to make it a day in advance store it tightly wrapped in the fridge. You can heat it up at 300 degrees on a baking pan. Heat it for about 10 minutes or until the galette is slightly warm.
Can you leave the skin on the apples?
Yes! This apple galette recipe calls for sliced apples and I like to leave the skin on the apples when I slice them. Call me lazy but the skin has lots of vitamins. It also saves me some time too.
Apple butter is my secret to getting incredibly sweet apple flavor. I use Musselman's but if you are really inspired, you could make this homemade recipe. The apple butter is mixed in with the apples and serves as the sweetener. I cooked them for just a little bit before baking them on the puff pastry.

RECIPE
Apple Galette with Ricotta and Almonds
Ingredients
- 2 Tablespoon salted butter
- 4 cups of thin sliced apples about 3 to 4 large apples, cored and peeled if desired
- ¾ cup apple butter
- ¾ cup ricotta cheese
- ½ teaspoon vanilla
- ¼ cup powdered sugar plus extra for garnish
- 2 eggs beaten (divided use)
- 1 large sheet of thawed puff pastry about 8 to 9 ounces
- ¼ cup slivered almonds toasted
Instructions
- Preheat oven to 400 degrees.
- Melt butter in a large frying pan. Add apples and apple butter. Mix well and saute' for about 10 minutes on low heat or until apples start to soften. Set aside to cool.
- In a small bowl, mix together ricotta, vanilla, ¼ cup powdered sugar and 1 beaten egg. Reserve the other egg for later.
- Roll out the puff pastry on a baking sheet covered with parchment paper. Spread the ricotta mixture on top. Top with apples in a single layer and leave a 1 ½ inch border all around the edge. Turn up the puff pastry to form a crust. Sprinkle the top with the toasted almonds. Brush the pastry edges with the remaining beaten egg.
- Bake for 18 to 22 minutes or until pastry is golden brown.
- Let cool for 10 to 20 minutes. Sprinkle with powdered sugar before serving.
