    Soup in Seconds

    Okay, you might not be able to make soup in seconds but I thought it sounded kind of catchy. But you can make this soup in minutes. It has been so cold lately that I have been making soup at least twice a week. My husband thinks he doesn't like soup until he eats a warm bowl on a freezing cold night. As long as it is a hearty soup, he is happy.

    This soup requires 4 ingredients not including the salt, pepper and grated cheese. The nice thing is you get plenty of nutrition from the kale in it. The tortellini is hearty and I buy turkey kielbasi from Trader Joe's which has less salt and no nitrates. Put the four ingredients together and you have one warming meal. This recipe makes plenty so you will have leftovers for another dinner or lunch the next day. It tastes great reheated. In the next few weeks I will have plenty more hearty soup recipes.

    Tortellini Soup with Kielbasi and Kale

    12 cups low sodium chicken broth
    1 head kale, cored and chopped
    12 ounces kielbasi, sliced (I used turkey)
    2 (14 oz) packages frozen tortellini
    salt and pepper to taste
    Grated Parmesan cheese for serving

    Heat broth on high heat in a large soup pot. Add kale and cook for 5 minutes or until wilted. Add kielbasi and tortellini and cook according to tortellini package directions which is typically 18 minutes or 4 minutes for precooked ones. Serve with grated cheese if desired.

      Hi Lisa-
      I love kielbasa, my moms all Polish. I have some fantastic kielbasa recipes..lmk if you want them. yours sounds great. Love tortellini also. I'll have to try.

      Sounds good to me! I buy that turkey kielbasa from Trader Joe's too. I use it in gumbo!

      I've found that tortellini soup is always ready so quickly. I don't know why I don't use that piece of knowledge more.

      We have been having many types of soup the past few weeks.

      I have some kielbasa in the frig - I will be using it in my next soup recipe. I love tortellini in soups.

      Simple soups are always the best. The flavors of each ingredient come through and not one of them gets lost like they do in more complex soups. I love the idea of using kale. Looks fantastic Lisa!

      I can eat soup ALL YEAR LONG! And I find that a bowl of soup and a slice of good bread is plenty.

      After meeting my husband, I made soup for dinner, we ate it, I cleaned up and came back and he's like "what's for dinner?!"
