As you probably already know, I don't consider myself a great baker. I don't have a lot of baking experience because I really don't like having cakes and cookies lying around the kitchen all the time. I just baked my own bread for the first time without a bread machine and would like to enhance my baking skills. With that comes practice but the hips could really use more practice in a yoga class or on the treadmill.
3 Tbs flax seed
2 teaspoon pumpkin pie spice
Preheat oven to 375 F. In a medium bowl, combine sweet potatoes, pineapple, egg beaters and sugar. Stir until well combined. In a large bowl combine flour, baking powder, baking soda, flax seed, pie spice and salt. Pour wet ingredients over dry ingredients and fold until dry ingredients are just moistened. Do not over mix. Spray muffin tins with nonstick cooking spray. Spoon about ¼ cup batter into each cup. If there is not enough batter to fill the tin, put a small amount of water in the empty ones. Bake for 16 to 20 minutes. Makes 14-16 muffins.

As soon as I read the ingredients I was in love with these! I really, really, REALLY, like sweet potatoes and pineapple together. Great way to get in some healthy flax seed, too! I'm not a baker either, and even then it's usually from a box, but these look really good to me. YUM!
