    Healthy Sweet Potato Muffins

First Published: January 25, 2009 . Last Modified: October 1, 2021 lisa37 Comments This post may contain affiliate links

As you probably already know, I don't consider myself a great baker. I don't have a lot of baking experience because I really don't like having cakes and cookies lying around the kitchen all the time. I just baked my own bread for the first time without a bread machine and would like to enhance my baking skills. With that comes practice but the hips could really use more practice in a yoga class or on the treadmill.

That being said, I can make muffins. I love having a quick take along breakfast or snack and I like to experiment with healthy muffins. It is also a great way to pack nutrition into my children's diet. This recipe is adapted from Louisiana Cookin's 1st prize winner in their 2005 sweet potato contest. These muffins are moist and dense but do not contain any oil or butter. I love how the pineapple and pumpkin pie spice enhances the flavor. You can't go wrong with fruit, a vegetable, whole wheat and flax seed all rolled into a muffin. These were even better the next day. Make sure you store them in a plastic air tight container.

    Healthy Pineapple Sweet Potato Muffins

1 cup mashed baked sweet potatoes
1 cup crushed canned pineapple, drained well
½ cup egg beaters (or 2 eggs)
    ⅔ cup sugar
2 cups white whole wheat flour
    1 tablespoon baking powder
    1 teaspoon baking soda
    3 Tbs flax seed
    2 teaspoon pumpkin pie spice
    ½ teaspoon salt

Preheat oven to 375 F. In a medium bowl, combine sweet potatoes, pineapple, egg beaters and sugar. Stir until well combined. In a large bowl combine flour, baking powder, baking soda, flax seed, pie spice and salt. Pour wet ingredients over dry ingredients and fold until dry ingredients are just moistened. Do not over mix. Spray muffin tins with nonstick cooking spray. Spoon about ¼ cup batter into each cup. If there is not enough batter to fill the tin, put a small amount of water in the empty ones. Bake for 16 to 20 minutes. Makes 14-16 muffins.

Yum! I hear you on the hips ...

I wonder, is the flax seed essential?

Thanks about the award, I finally figured out how to transfer it to my blog. I tried when you gave me one and embarrassingly technology won.

Thanks you for posting this! I love baking but don't like the hips issue. Poor Ben has forbidden me from baking because of his diet problems, so now I can make these guilt free!

As soon as I read the ingredients I was in love with these! I really, really, REALLY, like sweet potatoes and pineapple together. Great way to get in some healthy flax seed, too! I'm not a baker either, and even then it's usually from a box, but these look really good to me. YUM!

yes the flaxseed is necessary - good omega 3's in your diet and fiber and the need to omit oil is great!
