    Breakfast for dinner

    This is going to be a quick post because I have to go to an EAGLES pep rally at my children's school. But I also have some big news. My husband will now eat egg beaters. He finally tried a bite and likes them. In his forty three years, he has not eaten an egg for breakfast. He couldn't stand the smell of eggs but finally got over it. This is excellent for me as now I can make quiche, omelets and breakfast casseroles. The best part will be having breakfast for dinner. As you can see, I made breakfast burritos the other night. We will be having them again with different kinds of fillings. These were vegetarian but my husband is dreaming about the bacon, ham, sausage and cheese he can put in them. (Keep dreaming , buddy...we're eating healthy here.) So check this out for a filling, healthy breakfast, lunch or dinner.

    Mexican Breakfast Burritos

    1 TBS olive oil
    ¼ cup chopped onions
    1 jalapeno, cored and minced
    ½ cup canned black beans, rinsed and drained
    ¼ cup salsa
    1 cup egg beaters (or 4 eggs)
    ½ cup shredded low fat Mexican blend cheese
    2 whole wheat tortillas (8 inch)
    light sour cream and salsa for serving

    In a large non stick frying pan, heat oil to medium heat. Add onions and jalapenos. Cook for about 5 minutes or until onions turn golden. Add beans and salsa and heat until warm. Add egg beaters and cook until firm while stirring occasionally. Top with cheese and put lid on pan until cheese is melted. Heat tortillas in microwave for 10 to 15 seconds or until warm. Add egg mixture and roll up, making sure to tuck sides in. Serve with sour cream and salsa.

      My kids won't eat eggs...breakfast would be so much easier if they would.

      Yummmyy!! These look delicious and you know how to wrap a burrito. Mine always come undone. I bet you are so excited about cooking eggs for breakfast now...can't imagine NOT eating them for b-fast.

      I love breakfast for dinner! My kids do too... my husband - not so much. Love these breakfast burritos! Might be able to get hime to eat one of those if I add some sausage to it! YUM!

      Lis,
      we eat eggs everyday of our lives.
      Scrambled, hard boiled, over easy or just in a quiche or omelet.
      I am not an egg beaters fan, but am happy the husband will finally get over his fear of albumen!

      Yummy looking burrito! My kids will only eat hard boiled eggs. But we just had breakfast for dinner the other night, too. German pancakes, eggs, bacon, fruit. It always seem like such a good, easy idea for dinner, but each thing seems to be time consuming and dirty lots of pots and pans. You go, Girl with the healthy eating! (I actually eat a lot more healthy than my blog lets on! 😉

      Oh Lisa I love this! And it's such a good way to start the day and a healthy way to end the day too. I don't like eggbeaters, but I love eggs. I can't imagine breakfast without eggs...weird.

      Mmmmm ... breakfast burriots! YUM! My hubby and youngest love black beans, and my son and I loooove eggs! This is a great idea for dinner! I especially like how you kept this full flavored with onions and jalapeno peppers. I've not tried the whole wheat tortillas, but have seen them at the store. Great recipe!

      I am weird and that I can't eat breakfast food past breakfast time.

      These look good and something I should give a shot next weekend (I also never make breakfast during the week because I prefer sleep).

      I totally have a thing for breakfast burritos! But I have to admit I'm with your husband on this one - I like mine with sausage, bacon, diced potatoes, eggs and just a light smattering of cheddar. And salsa to pour on each bite.

      My waistline is getting bigger by the day though, so I need something as an alternative. Black beans it is. 😉
