    Roasted Tomatillo Salsa

    My husband loves homemade salsa. On Valentines Day, I decided to make this salsa for our movie. As usual, we didn't eat enough at dinner and had to have a snack. I can't say it went that well with the red wine we drank but no one seemed to mind.

    First thing you do is preheat your oven to broil. Gather these ingredients:

    8 to 10 tomatillos, husks peeled and cut in half
    3 jalapenos, seeded, cored and cut in half
    3 cloves garlic
    1 TBS olive oil

    Lay the tomatillos (cut side down), jalapenos and garlic on a baking sheet and drizzle with olive oil. Broil in oven for 8 to 12 minutes or until tomatillos start to char. Remove garlic and jalapenos earlier if they get too dark.

    Let cool and put all the vegetables in a food processor. Add:

    a handful of cilantro

    1 TBS sugar
    1 teaspoon ground cumin
    salt and pepper to taste


    Process ingredients until smooth. Chill if desired. It is good warm or cold.

    This salsa is so good and tastes so fresh. We had tortilla chips with it would be a great topping on beef, chicken or fish. It is so easy to make.

      Oh, you've done it now! I LOVE, LOVE, LOVE tomatillo salsa. This looks and sounds great! I was surprised to see sugar in the ingredients! Love that you roasted these; gosh, I bet your kitchen smelled heavenly. YUM!

      I am so glad you reminded me of these little guys-it has been a year since I have esperimented with them. And I love making salasa---maybe tonight I will make a chutney type deal with these and some chicken. hum.

      This looks SO good! I always like the "green salsa" best when we go to our favorite Tex Mex place, and I am sure that your homemade version is even better. I've never really cooked with tomatillos, but you've motivated me to get started!
