    2. Reserve about ½ cup of the spaghetti cooking water, then drain the spaghetti.
    3. Add the butter and garlic to the pot. Saute on medium heat for a minute or two to soften garlic. Add pasta water and cheese. Whick well to combine.
    4. Add pasta to the butter mixture and stir to combine. Cook for a few minutes or until all the pasta is covered in a thick sauce.
    5. Add salt & pepper to taste. Sprinkle with parsley and serve with extra Parmesan cheese.

    If you want this as a vegetarian entree dish, make sure to use a vegetarian brand Parmesan cheese.

    This dish makes a good side dish next to poultry, meat, eggplant Parmesan or fish.
