Garlic Butter Noodles
Quick garlic butter noodles are a flavorful, easy side dish made with pasta, fresh garlic, butter, and Parmesan.

- 16 ounces spaghetti or fettucine pasta noodles
- 4 Tablespoons salted butter
- 2 Tablespoons minced garlic
- ½ cup shredded Parmesan cheese, plus extra for serving
- Salt & Pepper to taste
- parsley (or other fresh herbs) for garnish
Bring a large pot of salted water to a boil & then add the pasta noodles. Cook for 8 to 12 minutes until al dente or according to package directions.
Reserve about ½ cup of the spaghetti cooking water, then drain the spaghetti.
Add the butter and garlic to the pot. Saute on medium heat for a minute or two to soften garlic. Add pasta water and cheese. Whick well to combine.
Add pasta to the butter mixture and stir to combine. Cook for a few minutes or until all the pasta is covered in a thick sauce.
Add salt & pepper to taste. Sprinkle with parsley and serve with extra Parmesan cheese.
If you want this as a vegetarian entree dish, make sure to use a vegetarian brand Parmesan cheese.
Fresh basil is a great substitute for the parsley. Herbs can be chopped and sprinkled on the pasta or mixed into the sauce.
This dish makes a good side dish next to poultry, meat, eggplant Parmesan or fish.
