    Herb Roasted Shrimp And Tomatoes Recipe For Fresh Florida Tomato Month

    Herb Roasted Shrimp and Tomatoes sits on a bed of saffron scented orzo to make a really delicious dinner!  This recipe is to celebrate Florida tomato month.

    April is Florida Fresh Tomato Month

    If you are looking for some tomato eye candy, you have come to the right place.  If you read my blog, you know I am a tomato fanatic. While I love NJ tomatoes in the summer, now I am enjoying  Florida tomatoes as April is National Fresh Florida Tomato Month. The Florida Tomato Committee sent me a box of beautiful red juicy tomatoes and we feasted on them for a week.

    Tomatoes are delicious roasted.

    Just gorgeous , right? Fresh tomatoes are great to cook with but I also love them in Caprese salads.  

    Herb Roasted Shrimp with Tomatoes

    I was asked to come up with a recipe and so many ideas swirled around my head. I wanted to make a sauce but thought these tomatoes were just too good to cook on the stove for hours. So I decided to roast them in the oven to bring out the natural sweetness. They were perfect paired with herb roasted shrimp over some saffron scented orzo. The colors were just fabulous.

      Favorite way is Tomato and Bacon sandwich. Love them roasted with Parmesan cheese on them. Really, there is not too many ways that I don't love them.

      OMG YUM! ahhh my mouth is watering while I bask in the glorious photos of tomatoes and shrimp. I want! I'm going to have to put this on my menu before summer hits and I don't want to turn on the oven...they look too good to pass up.
