    Easy Bourbon Meatballs

    I am the queen of under 30 minute meals for dinner. But sometimes I have to think a little harder to come up with a good easy-to-make appetizer. The veggie tray with some spinach dip just doesn't cut it in my house. My family wants stick to your ribs appetizers that have a little more substance. With March Madness  in full swing, I know I will need some quick and easy finger food.

    The other night while checking in my freezer and pantry, an appetizer light bulb went off.  I often use Sun-Bird Seasonings to make quick dinners. It is easy with their seasoning packets and only a few other ingredients. This time I decided to use the Bourbon Chicken Seasoning Mix to coat some meatballs. I always keep a frozen package of low- fat turkey meatballs on hand for a quick dinner. I prefer to make my own but sometimes it is just more important to be at my kids soccer game than in my kitchen rolling meatballs.

    My family loved them and they can also be served with some rice or noodles for a quick entree. If you want to use homemade meatballs, go to town. I am hoping next time I make these, I will have a batch of homemade meatballs in my freezer. This recipe would also work well in a crock pot. I like to serve it with fresh chunks of pineapple too.

    Bourbon Meatballs

    A quick and easy hearty appetizer
    Servings: 4 to 6

    Ingredients

    • 1 package Sun-Bird Bourbon Chicken Seasoning
    • 1 ½ TBS soy sauce
    • 3 ½ TBS sugar
    • 1 cup water
    • 16 ounces frozen or cooked meatballs

    Instructions

    • Mix together seasoning, soy sauce, sugar and water.
    • Add to a medium size frying pan and cook on medium heat. Bring mixture to a boil.
    • Lower pan heat and bring to a simmer. Add meatballs. Cover and cook for 10 to 12 minutes or until meatballs are heated through.

    Notes

    This is a great appetizer but also good served on a bed of rice.

      How do you think it would taste if I used brown sugar instead of regular sugar? I usually mix brown with soy sauce...hmmm - thoughts?
