I love the last days of summer and I am trying to visit as many farmers markets as I can. I am still enjoying the bounty of fresh Jersey tomatoes I bought two weeks ago. Instead of doing the usual canning, I made several batches of roasted tomato sauce. I have plenty for the coming months. Pasta is a staple in my house so since we eat it often, I like to try and make it as healthy a meal as possible. Barilla Plus is my pasta of choice.
When Barilla contacted me to see if I’d like to make a swap from my regular pasta, it was an easy decision. Their pasta is made from ingredients such as flaxseed, legumes and spelt. But it still tastes as delicious as regular pasta. I often cook their whole grain pasta together with other wholesome ingredients to make a quick and easy dinner. The pasta goes perfect with roasted tomato sauce and to make things a little more hearty, I can add extra meat, beans or veggies. For this weeks pasta dinner, I pulled a batch of sauce out of the freezer, sauteed some lean ground beef, mixed it together and had a hearty Bolognese sauce for my whole grain spaghetti.
Some of the variations I will be trying in the future are Barilla whole grain penne with blush sauce and broccoli. I can heat up my roasted tomato sauce, add a touch of half and half and some fresh broccoli. Another meal will be Barilla whole grain farfalle with chick peas and sauce. The possibilities are endless! With school starting next week and the kids sports, I can never have enough quick healthy meal ideas. - 3 to 4 lbs ripe plum tomatoes
- 2 tsp onion powder
- 2 tsp garlic powder
- 1 tsp dried Italian seasoning
- 2 to 3 TBS olive oil
- a handful of fresh basil chopped
- salt and pepper to taste
- Preheat oven to 375 degrees. Line a large baking sheet with aluminum foil, Slice tomatoes in half and lay on baking sheet with the cut sides up. Sprinkle with onion powder, garlic powder, Italian seasoning and drizzle with olive oil.
- Bake for 50 minutes or until tomatoes are soft and juicy.
- Cool tomatoes then process in a blender with the basil. Add salt and pepper to taste.
- Reheat to serve warm with pasta. It is also perfect as a pizza sauce.
