Roasted Tomato Sauce and Barilla Plus

I love the last days of summer and I am trying to visit as many farmers markets as I can. I am still enjoying the bounty of fresh Jersey tomatoes I bought two weeks ago. Instead of doing the usual canning, I made several batches of roasted tomato sauce.  I have plenty for the coming months. Pasta is a staple in my house so since we eat it often, I like to try and make it as healthy a meal as possible. Barilla Plus is my pasta of choice.

When Barilla contacted me to see if I’d like to make a swap from my regular pasta, it was an easy decision. Their pasta is made from ingredients such as flaxseed, legumes and spelt. But it still tastes as delicious as regular pasta. I often cook their whole grain pasta together with other wholesome ingredients to make a quick and easy dinner.  The pasta goes perfect with roasted tomato sauce and to make things a little more hearty, I can add extra meat, beans or veggies.  For this weeks pasta dinner, I pulled a batch of sauce out of the freezer, sauteed some lean ground beef, mixed it together and had a hearty  Bolognese sauce for my whole grain spaghetti.

Some of the variations I will be trying in the future are Barilla whole grain penne with blush sauce and broccoli.  I can heat up my roasted tomato sauce, add a touch of half and half and some fresh broccoli. Another meal will be Barilla whole grain farfalle with chick peas and sauce. The possibilities are endless! With school starting next week and the kids sports, I can never have enough quick healthy meal ideas. You can always check out the Barilla website for more recipe ideas.

Roasted Tomato Sauce

This is great to double or triple. You can make big batches and freeze for all winter!
Ingredients
  • 3 to 4 lbs ripe plum tomatoes
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1 tsp dried Italian seasoning
  • 2 to 3 TBS olive oil
  • a handful of fresh basil chopped
  • salt and pepper to taste
Instructions
  1. Preheat oven to 375 degrees. Line a large baking sheet with aluminum foil, Slice tomatoes in half and lay on baking sheet with the cut sides up. Sprinkle with onion powder, garlic powder, Italian seasoning and drizzle with olive oil.
  2. Bake for 50 minutes or until tomatoes are soft and juicy.
  3. Cool tomatoes then process in a blender with the basil. Add salt and pepper to taste.
  4. Reheat to serve warm with pasta. It is also perfect as a pizza sauce.
Notes
Additional herbs, cooked ground meat or other cooked veggies can be added to this sauce. Use your imagination.

Funny, but Barilla has been my favorite pasta for a couple of years now.. I like the taste and texture. I guess spagehtii and meatballs is my all time favorite pasta meal.

Barilla Plus is our favorite pasta too, been using it for years. Although I can’t eat it anymore my family still enjoys it! Our favorite pasta sauce is actually a Barilla recipe I can’t find online anymore, but essentially it’s lots of parsley, a few minced garlic cloves, red pepper flakes, S&P and olive oil. It’s my daughter’s most requested dinner.

Simply love Barilla, the best pasta I can get. Live in souther France during summers and making a Bolgnese with fresh tomatoes that actually got mature still on the bush is wonderful. In my native Sweden I have to stick to the canned tomatoes but that works too.

Lately I’ve been loving a simple pasta mixed with roasted tomatoes, garlic, peas or summer squash and kale pesto! I make the pesto ahead of time and freeze in an ice cube tray for easy use on weeknights.

This recipe for the Roasted Tomatoe Sauce and Barilla Plus Spaghetti is awesome. The texture of the pasta compliments the sauce well. Barilla is my pasta choice.
