This is great to double or triple. You can make big batches and freeze for all winter!

Ingredients
3 to 4lbsripe plum tomatoes
2teaspoononion powder
2teaspoongarlic powder
1teaspoondried Italian seasoning
2 to 3TBSolive oil
a handful of fresh basil chopped
salt and pepper to taste
Instructions
Preheat oven to 375 degrees. Line a large baking sheet with aluminum foil, Slice tomatoes in half and lay on baking sheet with the cut sides up. Sprinkle with onion powder, garlic powder, Italian seasoning and drizzle with olive oil.
Bake for 50 minutes or until tomatoes are soft and juicy.
Cool tomatoes then process in a blender with the basil. Add salt and pepper to taste.
Reheat to serve warm with pasta. It is also perfect as a pizza sauce.
Notes
Additional herbs, cooked ground meat or other cooked veggies can be added to this sauce. Use your imagination.
