Smoked Salmon Tea Sandwiches

I have to say that I am not a dainty tea kind of girl. But one afternoon I went to The Four Seasons for high tea with Wendy from La Phemme Phoodie. We had a great time and the tea, sandwiches and mini pastries were delicious. I definitely would like to go back however it is not in my budget to go too often. In the meantime, I had a craving for some tea sandwiches so one day for lunch I decided to make smoked salmon sandwiches with cream cheese and cucumbers.They were easy and delicious. These sandwiches would be a great addition to a brunch. I didn’t give any exact measurements in the recipe because everyone likes the filling a little different. I prefer my sandwiches light on the cream cheese but spread on as much or as less as you want.Link

Smoked Salmon Tea Sandwiches

cream cheese, softened
white bread with the crusts cut off
English cucumber, sliced very thin
smoked salmon or lox

Spread a thin layer of cream cheese on slices of bread. Top with slices of cucumbers and salmon. Top with another slice of bread. Cut into desired shapes.

There's something about cream cheese and lox that screams for cucumber. I've eaten it like that all my life (on a bagel, of course :-).

I also like adding thinly sliced sweet onion.

Have you ever tried it with pressed cottage cheese? It may not work as well in a tea sandwich since it's more difficult to spread, but it tastes great.

I don't like salmon so I make this sandwich with radishes instead of salmon. Love it!

I usually eat sandwiches after my afternoon nap. I have never tried salmon sandwich but now I have changed my mind. It seems like a great tea-time dish. Thanks.
