    Mini Easter Peeps Cakes

    The other day I attempted to make donuts with my new Wilton donut pan. Instead we had a little mishap. The mishap resulted in a perfect way to make little Easter cakes. I filled the pan too much so one side looked like a giant cupcake and the other side looked like a giant cupcake with a hole in the middle. Perfect size for a Peep or some jelly eggs. See what I mean.

    All you have to do is get your favorite boxed cake mix and follow the instructions to make the batter. This makes enough for 12 cakes. I always add buttermilk instead of water to the mix. This gives the cake a more homemade flavor. I baked them for about 12 minutes at 375 degrees or until they were golden and sprung back from the pan.

    My kids and I frosted the cupcakes with the easy to use canned frosting and I also added some green food coloring to a bowl of shredded coconut. The ingredients weren't homemade but very easy for kids to use.


    We added Peeps in the middle and some of our favorite Starburst jelly beans. How cute are they? I used the leftover green coconut to use as grass on the plate. Now we have a whole family of little Peeps cakes. Actually they were all eaten and we have none left. Bye, bye Peeps cakes!
