    Ice Cream Sushi for a Birthday!

    Yesterday my little food blog turned three years old. It's hard to believe that I have been blogging for over three years now. I look back and reflect on how much I have learned. I am in awe of the friends I have made and how supportive the food blog community is. It's been a wonderful journey that I know won't end for years to come. I remember the first post I wrote and how happy I was to get my first comment from daughter's kind teacher.

    Speaking of my first blog post, I wanted to reminisce and share it with you again. This is special to me not just because it was my first recipe in my blog but because my daughter created it for a kids recipe contest when she was nine.

    It is called "Sushi Surprise" and my daughter won a prize in the Edy's/ Dryers Junior Chef ice cream contest. This is the perfect thing to make with kids. It might get a little messy but it is easier to clean up than finger painting. Thanks to you, my faithful readers! Because of your support, I know I have many years of food blogging ahead of me.     Sushi Surprise

    2 to 3 large scoops of your favorite ice cream
    1 cup crushed vanilla wafer cookies
    1 to 2 green fruit roll ups
    caramel and chocolate syrup
    Swedish candy fish
    Colored sprinkles

    Scoop the ice cream onto wax paper and shape into a long cylinder. Roll up and put back into the freezer until very firm. Remove from freezer and roll in cookie crumbs. Slice into 1 inch pieces. Cut fruit roll ups in pieces and roll around the edges to look like sushi rolls. Garnish the plate with syrup to look like soy sauce and add some candy fish. Add some sprinkles to the middle of the rolls. Some can be garnished with fish on top. Have fun and try to eat with chop sticks.
